South casserole: classic recipe

You will need:

  • 1 medium squash;
  • 3 pcs. tomatoes and potato tubers;
  • 3 tbsp. l ordinary butter;
  • 2-3 tbsp. l milk and as much wheat flour;
  • egg, enough cheese to sprinkle (grams 100-150), spices and salt.

Peel the vegetables and cut into thin slices or slices. Prepare a baking dish - grease it with vegetable oil, then put the vegetables on the bottom, it will turn out beautifully if the slices overlap. Season with salt and taste with spices - a mixture of herbs or just black pepper. Cook a special sauce: to do this, fry in butter the indicated amount of flour until light golden brown, pour in the milk and cook until thickened. Remove the dishes from the heat, cool a little, beat the chicken egg in the sauce and stir well with a whisk, salt. Pour the vegetables in the resulting mass, and sprinkle with enough grated hard cheese on top. Vegetable casserole "South" will be ready in half an hour at a temperature in the oven of 180-200 degrees. Serve it hot, serving separately sour cream or natural yogurt, as well as sliced ​​fresh vegetables or a light green salad.

Of course, tomatoes and zucchini are excellent ingredients for a light dinner, but the male half of the family most often prefers more substantial dishes - with meat. We suggest you combine the benefits of vegetables and the nutritional value of minced meat. For a large serving for the whole family, prepare:

  • 2 kg of potatoes, zucchini, eggplant, pepper, carrots, etc. - you can take any vegetables that you have in the refrigerator (with the possible exception of beets);
  • 500-700 gr. minced meat - the best choice would be a mixture of beef and pork, but any other will do;
  • 2 onions;
  • 2/3 cup milk, 2 eggs, 5-6 tablespoons butter and as much flour;
  • cheese - 200 gr., and even more, spices, salt, as well as any seasoning to taste.

Vegetable South casserole with meat is cooked in almost the same way as the previous recipe. First chop the onions finely or chop them in a blender or meat grinder. Add to the minced meat, salt, sprinkle with spices and mix well. Fry the meat mass in vegetable oil, it should be almost ready. Grind the selected vegetables - best cut into slices or plates. Cook the pouring sauce as described in the previous recipe: first brown the flour, pour in the milk and stir until the liquid thickens. Beat eggs and salt. Put half the vegetables on the prepared baking sheet, spread the minced meat evenly on top, and then cover with a second layer of potatoes, zucchini, tomatoes, etc. Pour the sauce and sprinkle with cheese abundantly - the more it is, the more β€œYuzhnaya” vegetable casserole will turn out tastier. Who does not like a little crisp, golden crust! Put the pan in the oven and bake for half an hour or forty minutes at medium temperature. Serve, of course, hot, preferably with sour cream and fresh vegetables.
