Baked Eggplant

Baked eggplant with vegetables

Baked eggplant with minced meat

Peel onion, chop and mix with minced meat and ketchup. Put in a metal bowl and simmer for 3 minutes. Wash and peel the eggplant and potatoes, cut everything into circles. Lubricate the baking dish with butter, put half of the potatoes, sprinkle with nutmeg (grated) and cheese on top. Spread half the minced meat, distributing evenly on the potatoes. Lay out the eggplant. Combine cream, milk, eggs, grated nutmeg, pepper and salt. Pour half the resulting mixture into a mold. Spread out the second layer in the same way. Baked eggplant with tomatoes

Cut 2 eggplant in centimeter-thick circles, sprinkle with salt and remove for 2 hours. Cut 4 tomatoes into thin rings. Chop 4 cloves of garlic and mix with mayonnaise. Grate 200g of cheese, add half to mayonnaise. Put eggplant in a mold, place tomatoes on top and grease them with mayonnaise. Sprinkle with the rest of the cheese and put in the oven. When the cheese melts, put the eggplant and tomatoes on the dish.

Baked Eggplant with Cheese

Cut the eggplant into thin circles, add salt and put it on a colander for half an hour so that they do not get bitter. Grate mozzarella and parmesan cheeses . Peel the tomatoes and cut into cubes. Fry the basil stalk and chopped garlic in olive oil. Add basil leaves and tomatoes, season with salt, pepper and simmer for 15 minutes until the sauce thickens. Remove from heat, rub through a sieve and grind in a blender. Rinse the eggplant, dry, cut, roll in flour and fry in olive oil. Put them on napkins to absorb excess oil. In a glass form, put ketchup, spreading it all over the bottom, on top of the eggplant and sprinkle with cheese. So make a few more layers. Put in the oven. When the cheese is melted, get a dish.

Baked eggplant with tomato salsa and sour cream sauce

Cut 4 eggplants in half, make punctures on them and put in the oven, bring to readiness.

Make a sour cream sauce: mix 250 g sour cream, a bunch of chopped dill and 2 cloves of garlic. Add salt and red pepper.

Prepare salsa: finely chop the onion, garlic, bitter pepper and 3 tomatoes into cubes. Add olive oil and salt.

Remove a little eggplant pulp and stuff them with sour cream sauce and salsa.
