Chicken Escalope Recipe

Fragrant and tender chicken in a crispy crust - what could be more appetizing? Chicken escalopes will please not only adults, but also children. Thanks to the breading, the meat remains tender and juicy. The chicken escalope recipe is very easy and very economical. Its preparation does not take much time and effort.

Ingredients for the recipe:

  • Mustard - 2 tbsp.
  • Spicy herbs - 2 tsp
  • 3-4 small breasts of chicken or chicken.
  • Breadcrumbs - 350-400 g.
  • Chicken Egg - 2 pcs.

Cooking Chicken Escalopes

Let's cook meat. First remove the tendon and skin. We put each piece of chicken in a bag or under parchment paper and begin to roll out. Then we take a hammer and beat the meat. Escalopes should have a thickness of about 1-1.5 cm.

Pour the breadcrumbs into a wide bowl. If there are no crackers at home, then cut a loaf of bread into small slices and send it to dry in the oven for 20 minutes. We give ready crackers to cool, and then grind them using a food processor. Rusks for breading ready. You can add provencal herbs or spicy spices.

Sprinkle chicken escalopes with spices and spread mustard on all sides. Then you need to again sprinkle each piece with Provencal or Italian herbs.

Break eggs into a plate with a deepening and mix them. Dip each escalope into an egg, and then roll in breadcrumbs. Make sure that the crackers evenly lay on the meat, otherwise the crisp in some places will turn out to be thick.

We put the pan on the fire and add oil. We put chicken escalopes in a pan and fry on all sides until golden. As soon as the dish finds the desired color, put it on a paper towel to get rid of excess oil.

Serve the finished dish with a side dish of mashed potatoes. Also, garlic or cheese sauce is very suitable for chicken escalopes.

In the classic version, escalope is a chicken fillet in a pan, fried breaded until golden brown. We offer escalopes with mushroom sauce. The combination of crisp and tender sauce will delight you and your loved ones.

Components:

  • Mushrooms - 350-400 g.
  • Butter - 75 g.
  • Caper - 2 tbsp.
  • Chicken Breast - 6 pcs.
  • Spice.
  • White wheat flour - 400-500 g.
  • Cream, 25% - 100 ml.
  • Wine (it is better to take dry white) - 1-2 glasses.
  • Olive oil - 80-100 g.
  • Small lemon - 1 pc.
  • Grated Parmesan Cheese - 130 g.
  • A few twigs of parsley.

Cooking

Rinse and dry the chicken fillet. Put each piece under the plastic wrap and roll out using a rolling pin. If there is no film, a simple plastic bag will do. When the meat is rolled out, it needs to be slightly beaten off with a hammer.

Set escalopes aside.

We take any mushrooms and cut them into small cubes. If there are no fresh mushrooms, then frozen mushrooms will do. You can also use a mixture of several types of mushrooms. This will give the dish a richer flavor.

Sprinkle the meat with spices, and then roll in the flour, after sifting it so that there are no lumps of dirt in it. Instead of flour, breadcrumbs can be used. In this case, the meat must first be lowered into the egg, and then into the breadcrumbs.

Melt butter in a wide skillet, then add olive oil. In a mixture of oils, fry the chicken in a pan until golden brown. After we take out the chicken escalopes from the pan and transfer them to a plate. Cover the meat with foil.

In the pan where the meat was cooked, put the mushrooms and fry them. After a few minutes, add dry white wine. Stew mushrooms in wine, and then add 2 tbsp. lemon juice. Mix everything thoroughly. Stew for a few more minutes and add cream and capers. Rinse the parsley and shake off excess drops of water. Finely chop the leaves, sticks are not needed, as they are hard. Add chopped greens to the sauce. Mix well and put on a small fire. When the sauce begins to thicken, cover the pan with a lid, turning off the heat. Let the dish cool slightly.

Spaghetti will be a side dish for the dish. Boil the pasta. We put spaghetti in a plate, and next to the chicken escalope, add the sauce on top and sprinkle with finely grated Parmesan.

Useful Tips

  • Any meat is suitable for escalopes, but it is better to choose low-fat varieties.
  • If after cooking the meat turned out to be raw, then wrap it in foil and place in a hot oven for several minutes.
  • For breading, you can use flour or breadcrumbs, if desired, spices or dry herbs can be added to the ingredients.
  • There can be any side dish for escalopes, including fresh vegetables and salads.
