The pride of an excellent culinary does not allow you to buy a ready-made one in the store, and you simply consider your cakes to be light cakes that do not need to be baked.

Let's start with the cream first . Traditionally custard is used for Napoleon , as all other creams do not soak puff cakes so well, and the cake may turn out to be rather dry. In order for the cream not to burn, it is better to cook it in a water bath. We put a saucepan with water on the stove, let it warm up for now. And in another pan, smaller in size, we begin to mix the ingredients of the cream.

We carefully grind five eggs with one glass of sugar, add half a glass of flour and vanilla on the tip of the knife. Carefully pour a liter of cold milk, making sure that our cream preparation is without lumps. We put the saucepan in a water bath and, constantly stirring, bring the mixture to a slight boil. The cream should be slightly thick. Set it aside, let it cool.

For the test we will need: granulated sugar (in the amount of one glass), 3 eggs, butter (2 tablespoons), 4 glasses of flour, a little salt and half a teaspoon of slaked soda.

Beat eggs with sugar, add butter, salt, soda and flour. Knead the dough. You need to knead it until it starts to stick off your hands. You may also need to add flour, as its consumption depends on the variety. As soon as the dough is no longer actively sticking to your hands, set it aside for about 20 minutes, and return to the cream yourself.

It has already cooled slightly, and a pack of softened butter can be driven into it. The cream is ready, and the dough has already settled. You can proceed to the most important thing. So, bake the cake in a pan.

We divide all the dough into 16 parts, the size of a tennis ball, roll out and spread on a dry hot frying pan, standing on fire. Cakes are baked very quickly, so it is better not to leave the stove. Do not forget just before you put in a pan a new cake, carefully remove the traces of the previous stay on it with a clean napkin.

Everything. Cakes are ready too. You baked a cake in a pan. It remains only to "collect" it and decorate as usual.

Light cakes
Do not spare the cream, on average, you need to spread two tablespoons on one cake, otherwise the cake in the pan will not be soaked. Be sure to leave one cake - it will be sprinkled. The assembled and decorated cake can be served on the table in an hour, but it’s better to cover it with polyethylene and keep it in the refrigerator for a couple of hours.
