First you need to mix the flour with sugar, salt, starch. Then add eggs and beat thoroughly. Heat the milk slightly and slowly pour into the prepared mixture with constant stirring. The mass should be liquid and without lumps. If they did appear, you need to pass the dough through a sieve. It remains to add the melted butter and mix well. The resulting test should be allowed to insist so that the flour swells and thin pancakes do not break.
Grease the pan only once before baking the first pancake. Before you take the next portion of the dough with a ladle, you need to mix it, since starch does not dissolve in milk or water. Pour the dough in a very thin layer, otherwise the pancake will tear when turned over. Such pancakes must be baked quickly over high heat and turned over with extreme caution.
