Finally, we waited for the moment when vegetables and fruits were also sprinkled in our gardens. It's time to cook eggplant with cheese. Before, I did not recognize eggplants, now I often cook them, and even grow them myself. They are somewhat similar to potatoes and zucchini, but this is my personal opinion.
This recipe is more suitable for the appetizer category; I often cook it for home banquets. So, to cook eggplant with cheese, we need 1 large eggplant, 80 grams of hard cheese (in my opinion, Mozzarella cheese is an ideal choice for this snack), a clove of garlic, two tablespoons with a hill of mayonnaise, three tablespoons of tomato sauce.
We cook eggplant with cheese according to the following scheme:
1) Thoroughly wash the eggplant, cut it into slices and immerse it in boiling water for 2 minutes.
2) Grease a baking tray with oil and put eggplant slices on it.
3) Pass the garlic through a special crush and mix with mayonnaise. In the same mass we rub the cheese on a fine grater, mix everything.
4) We spread the resulting garlic-cheese mixture with a teaspoon on the eggplant, pour a little tomato sauce on top.
5) We bake eggplant with cheese in the oven at a temperature of no more than 200ºC for 20 minutes. Serve hot appetizer, otherwise the cheese will freeze. This dish can also be prepared in winter, since the eggplants are perfectly frozen and stored for a long time. Yes, and in stores they are sold almost the whole year, but their eggplants are nevertheless more dear and probably environmentally cleaner.
Eggplant with cheese and tomatoes are very tasty. They are prepared in almost the same way as simply with cheese. It will take 3 medium eggplants, 5 tomatoes, 200 grams of hard cheese (take the same Mozzarella cheese, although with other varieties it will probably work out well), 3 cloves of garlic, mayonnaise. We wash the eggplants in warm water, cut not into slices, as last time, but along into two halves. We cut the tomatoes in circles and spread them in a layer on the eggplant. Grated cheese, chopped garlic and mayonnaise combine and mix well, it turns out this kind of sauce. We pour eggplant with this sauce. Bake eggplant with cheese and tomatoes in the oven for no more than 20 minutes. We decorate a hot appetizer with a sprig of parsley and are in a hurry to serve hot.
Surely this appetizer can be supplemented with any meat, for example, ham or sausage. I myself have not tried this option yet, but I will definitely try to cook it.
It should be noted that eggplant is very useful for those who have heart problems. They contain a huge amount of potassium (it is even more in them than in cabbage, onions and sweet pepper), sodium, iron, phosphorus, calcium and magnesium. Therefore, it is also very useful for bones. And a substance such as lecithin allows you to effectively fight some diseases, for example, atherosclerosis.
To preserve all the beneficial properties in these amazing vegetables, it is better to bake or steam, and even better to eat fresh in the form of salads. There are practically no useful substances in frozen eggplants, but still some benefits remain. They can also be pickled with other vegetables. Fried eggplant, of course, turns out to be very tasty, but you can’t feed a child with such a dish, since it is not recommended to give fried children. Yes, and adults who monitor their health, I recommend baking or steaming.
So eat eggplant and do not shy away from this interesting vegetable, it will bring you nothing but good. And cooking them is very easy, you yourself have seen this by reading the recipes for appetizers with cheese and tomatoes. By the way, you can also cook young zucchini in the same way (or they are also called “zucchini”, after hearing the name for the first time, I was very surprised), it turns out very tasty.
