- starch - 20 grams;
- cream - 260 milliliters;

- gelatin - 10 grams;
- sugar - 300 grams;
- water - 200 ml.
Soak gelatin, following the manufacturer's recommendations. In a bowl, we dilute starch with water (approx. 50 ml), set aside. Sugar and lemon juice are cooked over high heat in a pot with a strong bottom. Remove from heat, pour in the remaining water and cream. Mix thoroughly, return to the fire. After boiling, remove from the stove, add the soaked gelatin and starch. Knead thoroughly until smooth. When the caramel cools down to 30 degrees, you can apply it to baking.
