For the dish you will need:
- salmon head - 1 pc.;
- 3 medium potatoes;
- 2-3 carrots;
- 1 onion;
- a couple of teaspoons of salt;
- 3 liters of water;
- spices: 5 bay leaves and 8 peas of fragrant black pepper.

The pan is needed a small, three-liter or slightly larger, but for the soup from one head more than 3 liters of water can not be poured - it will not be tasty. If you need more soup, add the tail and salmon fins to the broth, then the amount of water can be increased accordingly. It is necessary to take the fish chilled, not frozen.

Before boiling the salmon ear, the fish should be washed and cleaned of scales. Gills must be cut out of the head, after which it is good to rinse once again the place where they were. If you leave the gills, the dish will get an unpleasant bitter aftertaste. Also, small debris and harmful substances may remain in them, which, no matter how you wash it, will still get on the plate.

The processed parts of the fish should be put in a pan, then pour cold water. It is better to start cooking on a large fire. Bringing the broth to a boil can be removed from the foam with a slotted spoon to make the soup transparent and appetizing.

The head should boil for about five minutes, after which peas are thrown into the ear and left on the fire for another half hour. Now you can add the remaining components: onions, potatoes, carrots. It is better to pull out the head itself and put it on a plate to cool. The broth with vegetables remains on medium heat for ten minutes, then salt and bay leaf are added to it. Further the ear is cooked until vegetables are cooked. The head must be disassembled, separating the bones, and the meat returned to the soup 5 minutes before turning off the gas. Sliced greens should be put in each plate right before serving.
