Chicken Enchiladas is a traditional Mexican dish that translates to “stuffed chili.” Represents rolls, namely flat cakes with filling. They are stuffed with completely different products. The main thing is that the filling is sharp, that is, it includes chili. In Russia, such a dish is considered very popular, which includes chicken. As for the sharpness of the filling, it is not necessary to make it so that after half a day everything burns in the mouth. You can adjust the amount of chili and add it quite a bit if this kind of spices is not very loved in the family. In general, enchiladas (or enchiladas) are a very tasty and satisfying snack.
List of ingredients that will be needed to make chicken enchiladas
This dish is prepared in several stages. Enchiladas will require the tortilla itself, the sauce and the chicken filling. Let's move on to the full list of ingredients.
For filling:
- ½ teaspoon dry cumin (cumin);
- 0.5 kg of chicken breast;
- a spoonful of refined olive oil;
- 2 tablespoons canned corn;
- a pinch of salt and dry oregano;
- 0.2 kg of cheddar or other hard cheese.
For tortilla:
- 60 g of corn and wheat flour;
- 3 pinches of salt;
- 2 tablespoons melted butter;
- 3 tablespoons of water.
For salsa:
- 1 piece of purple onion and a fresh pod of chili pepper;
- 0.5 kg of tomatoes;
- a pinch of sugar and salt;
- 2 cloves of garlic;
- a spoonful of refined olive oil.
Also for chicken enchiladas you need to buy cilantro branches, which will serve as a decoration for the dish.
Making tortillas - tortilla
They can be purchased at the store, if there is no desire to mess with flour. Mexican tacos are also suitable. If you want to make cakes yourself, it will take a maximum of half an hour. Pour cornmeal into a bowl and pour water over it. Five minutes later, add wheat, add oil, salt and knead the dough. Give it a “rest” for 10 minutes, after which roll thin cakes, the diameter of which should be about 20 cm. Fry the tortilla in a dry frying pan until golden spots appear (on both sides). It is important to ensure that they remain soft and not become crunchy.
Cooking salsa
The second step in the recipe for chicken enchiladas is making the sauce. To make salsa, you need to chop onion, chili and garlic finely. Chop tomatoes as conveniently as possible. Then put in a pan greased with butter, onions and garlic, fry for literally half a minute. Add tomatoes and chilli, season with salt and sugar, mix and simmer over low heat under a lid so that the tomatoes are completely boiled.
Cooking Stuffing Enchiladas
Now move on to the base of the dish. Cut the fillet into medium sized slices and fry in a pan. Pour boiling water, simmer until tender. Transfer to a bowl and let cool slightly. Then tear the meat with feathers, add cumin, salt, oregano, canned corn and a little red ground pepper. Mix the meat with spices so that they are evenly distributed. Stuffing for chicken enchiladas is ready!
Dish assembly
Enchiladas is almost ready. It remains a small matter - to put everything together and bake a little in the oven.
- Lay the cakes on the table, in the middle of each lay the cheese, grated on a coarse grater, and chicken stuffing.
- Collapse rolls from them. The whole filling should go, and the cheese will still be needed, so a small amount should be put aside.
- Put half of salsa in a heat-resistant form.
- Place rolls with the seam down on it.
- Pour the remaining salsa on top of the cakes, then sprinkle with cheese and put in the oven to bake.
- At a temperature of 200 ° it will take no more than 15 minutes.
When the enchiladas is cooked, garnish with cilantro and serve. Also, greens can be chopped and added to the filling.
Enchiladas with chicken in pita bread
This is the second cooking option, in which the cake is replaced by a more familiar and widespread flour product. Pita bread is no less suitable for this dish, although such an enchiladas can hardly be called traditional. And who cares if the result is a satisfying and very tasty dish, no worse than with tortilla or tacos. A kind of Mexican shawarma.
What do you need:
- packing of thin Armenian pita bread;
- ½ cup tomato sauce;
- 2 skinless chicken breasts;
- a spoon of flour;
- 150 g of hard cheese;
- 1 onion and red bell pepper;
- 2 tomatoes;
- chili pepper pod;
- a can of canned champignons or 250 g of fresh mushrooms;
- 2-3 cloves of garlic;
- add salt, red, black pepper, chili, paprika, cumin, oregano and other spices as desired, depending on your preference (be careful with hot spices).
How to cook enchiladas with chicken in pita bread:
- Finely chop the onion and lightly fry in oil. Add shredded mushrooms and simmer until the liquid has evaporated.
- Cut the chicken into small pieces, add to the mushrooms. Fry for 5 minutes, stirring constantly.
- Paprika and chili cut into small cubes, send to chicken with mushrooms. Then pour tomatoes, chopped garlic and spices with salt. Mix the mass thoroughly. Fry until almost all of the liquid has evaporated. It is often necessary to interfere with the filling.
- Melt the butter in another skillet. Pour flour and mix.
- Put tomato sauce, then pour a glass of water. Salt, mix until smooth and simmer a little.
- Armenian lavash cut into 4 parts or in half.
- For further preparation of chicken enchiladas, photos of which are shown in the article, you must first spread the filling on the edge of the pita bread, and then fold it in a neat roll. So do it several times so that there is no filling or lavash left.
- Pour the bottom of the heat-resistant form with half a tomato sauce. Lay rolls on top so that they fit snugly together. Pour over the remaining sauce, sprinkle with grated cheese and put in the oven.
