Cabbage pie - a family dish

The tradition of baking stuffed pies appeared many decades ago in Ossetia. But it should be noted that such dishes were prepared in families only on holiday dates. Although in everyday life such pies were also baked, it was very rare. They knew how to cook Ossetian pie with cabbage in every family. With the recipes of the pie, with the preparation of the dough and the toppings, each culinary specialist improvised a little at his discretion, but the essence did not change, and the dish has survived to this day, remaining one of the most popular and desired on any home table.

According to traditions, it was necessary to put three pies of various kinds on the festive table at once, and it is easy to guess that one of them was a pie with cabbage. The recipe for its preparation quickly migrated to Russian families. It is worth noting that a pie with cabbage for the lazy is just a myth, since in fact it requires a lot of trouble and patience.

To prepare the dough, you will need the following ingredients:

- milk - 500 ml;

- fresh or dry yeast - 50 g;

- sugar - from 1/2 to 3/4 st .;

- butter - 150 g;

- salt - 2 tsp;

- vegetable oil - 50 g;

- egg - 1 pc.;

- wheat flour - 1kg.

Valuable will be considered that pie with cabbage, where there will be a thin layer of dough and a juicy, and most importantly, delicious filling. It is necessary to warm the milk to a warm state. Closer to the end of the batch, add melted butter and vegetable oil in advance. Make sure everything is well kneaded.

Then you should leave the resulting dough for one hour. Do not forget that you did not add fat to the dough. It’s best to do it manually after mixing other ingredients, so the dough is much tastier. To begin, dilute the yeast in warm milk (not hot). Then float sugar, egg, salt, beat the resulting mass with a whisk. Remember that butter and flour have not been added yet. Spend about five minutes to make all the mixed ingredients β€œplay”.

Sift and weigh one kilogram of flour at this time. Next, knead the dough, the mixer is best for such a process, and let the resulting mixture stand. At this time, melt the required amount of oil and pour everything into the dough, while stirring. As a result, the dough should turn out tender. It may seem at first glance that the dough will stick, but in fact this is far from the case. Place the container with the dough in a bag and put in a slightly preheated oven (degrees to forty). In this case, the oven must be turned off.

While the cake dough is roaming around, you can easily start making the toppings.

To do this, you need a small head of cabbage. Chop the vegetable finely and put in a stewpan. Pre-add a small amount of oil and add the cabbage so that it gives juice. Add a little sugar, pepper and simmer until soft with the lid not fully covered. In order to make the cabbage pie tasty, you can add a pinch of chopped dill and chopped eggs to the filling. Get a pretty good combination. In fact, there are many options for filling, here you can improvise both with the products themselves and with your favorite spices. It all depends on the preferences of households and guests, as well as the skills and imagination of the hostesses. Make the cabbage pie the way you want it to be.

Leave the cake on the table for half an hour, during which time it will rise slightly. Before putting the product in the oven, grease its surface with a mixture of eggs and one teaspoon of water. The oven must be preheated to 180 degrees. Bake for 17 to 20 minutes.

It should also be noted that a good pie with sauerkraut can turn out if you use it instead of fresh, but this dish is for an amateur, the taste of the filling and the cake itself will be completely different.
