Morse is considered one of the oldest drinks distributed in the territory of modern Russia. He is already mentioned in Domostroy, the code of rules and instructions of the 16th century. And the etymology of this word comes from the Byzantine "Murse", which means "water with honey." In the modern sense, fruit drink is a refreshing non-carbonated drink made from juices of berries, fruits (and even vegetables) with the addition of sugar, honey, water, sometimes spices, nuts. General cooking technology
Most often, berries are used for the drink. They are washed thoroughly, seeds are removed from them, if any. Then the berries are ground (you can grind in a blender), pour water, boil for a few minutes or just bring to a boil and turn off the heat. After this, the drink must be allowed to cool, then strain it. Add honey or sugar, vanilla, spices, nuts to taste. Then the drink can be filtered again to avoid sediment. Some recipes suggest adding lemon zest or a slice of orange (but it must be remembered that citrus fruits strongly clog the berry flavor of the drink).
How to use
You can drink hot drinks in winter. In the summer it is used chilled. In both cases, it retains its originality, natural taste and smell. By the way, in classic old folk recipes, fruit drink is a low alcohol drink. It is made from fermented juices and has a strength of at least one percent.
Cherry and almond fruit drink
The pulp of berries contains useful vitamins and minerals, folic acid, pectins. Cherry juice perfectly fights thirst, improves appetite.
To prepare the drink βcherry and almond juiceβ we need: one kilogram of cherries, a glass of almonds, two liters of natural water, two large tablespoons of honey.
- Pour almonds with boiling water for up to ten minutes. We drain the water, peel the nuts from the skin, which would give a bitter taste. Grind the peeled almonds (you can do this with a blender, or you can shred in a mortar), mix with honey into a homogeneous mass. Transfer the mixture of honey and nut paste into a glass dish, put in the cold. We continue to prepare fruit drinks from almonds and cherries. Simple recipes sometimes also have their secrets.
- We remove the seeds from the cherries, washing them before in cool running water (after removing the seeds, it is not recommended to wash the berries, since a lot of juice will leave with the water). Grind the prepared berries in a blender. Previously, for this purpose - to make juice to pulp - they used an ordinary meat grinder or juicer.
- Pour the resulting thick juice with natural water, bring to a boil in a large saucepan. Cool a little. Combine with almonds and honey. Stir thoroughly. Let the drink brew for one hour. Then the cherry and almond juice should be filtered through cheesecloth, squeezed and, if desired, cooled.
