A Matter of Taste: Korean Cucumbers

Korean cuisine is one of the most popular in the world. She is characteristic of dishes with numerous seasonings. It is she who is famous for dishes of dog meat and fern leaves, as well as the main dishes of any national feast: rice porridge - pubi and fried pieces of beef - pulgoki. And Korean salad recipes (kimchi) and carrot (sabzu) are firmly โ€œpopulatedโ€ in the cookbooks of the hostesses.

Korean cucumbers - a wonderful summer dish, which is prepared very quickly and easily. To prepare it, you will need:

  • bell pepper (red or yellow - for contrast) - 1 pc.;
  • 30 g of soy sauce;
  • 3 cloves of garlic;
  • bulb;
  • 2 tablespoons of freshly squeezed lemon juice;
  • 2 tablespoons of vegetable oil (preferably olive);
  • some salt and black pepper to taste.

And now we are cooking. We cut the vegetables: pepper into thin strips, cucumbers in small cubes, onions - in rings, garlic - in plates. Then we mix the vegetables with spices and season the salad with soy sauce, oil and lemon juice. Peppers here can be replaced with carrots, but the salad in this case will be a little rougher. Before serving, it is advisable to keep it in the refrigerator for about an hour.

Korean cucumbers for canning for the winter. You will need:

  • cucumbers - 4 kg;
  • carrots - 1 kg;
  • 1 tablespoon of any vegetable oil;
  • 1 tablespoon of 9% vinegar;
  • 100 g of salt;
  • seasoning for Korean carrots - 1 sachet;
  • 3 small cloves of garlic.

To prepare the marinade, mix vinegar, sugar, salt and oil. Peel and finely chop the garlic. We grind carrots on a grater for making salads in Korean, and peel the cucumbers, if it is thick, and cut the ends on both sides. Next, put the vegetables in a bowl, add garlic and seasoning there, mix and pour the marinade. We leave the prepared mixture for 5 hours, then put it in the dishes. You need to sterilize 10 minutes and you can roll up.

The next dish is Korean fried cucumbers. To prepare them you will need:

  • cucumbers - 1 kg, it is advisable to choose a variety in which there are fewer seeds;
  • 1 tablespoon of salt;
  • 3 cloves of garlic;
  • a handful of sesame seeds;
  • 3 tablespoons of sesame oil.

Chinese cucumbers
For this salad, you need to thinly cut the cucumbers in circles, you can use a grater. We cut garlic into thin slices. Then sprinkle the cucumbers with salt and leave for half an hour. After this time, you need to rinse the cucumbers well so that they are not too salty, then squeeze. We mix cucumbers with garlic and spread on a well-heated pan, fry for two minutes. We spread it on a dish and sprinkle with sesame seeds.

Korean stuffed cucumbers are delicious . You will need:

  • cucumbers - 2 kg (preferably a small size);
  • medium-sized red apple;
  • half red bell pepper;
  • small onion;
  • 3 cloves of garlic;
  • ginger root - 40 g;
  • 1 medium-sized carrot;
  • green onions - 300 g;
  • ground red pepper - 10 g;
  • 1 spoon of honey;
  • 2 teaspoons of fish sauce;
  • salt to taste.

We cut off the ends of cucumbers, cut each along crosswise (approximately to the middle), rub it with salt. We put them in the dishes under the press for half an hour. Cut the onion into rings, peel the apple from the peel and seeds, grate the carrots. Using a blender, mix apple, onion, sweet pepper, ginger and garlic. To the mixture was not too thick, you need to add a little water to it. Then we add the sauce to the fish, honey, onions, carrots and mix again, but with a spoon. This will be the filling. We wash the cucumbers with water, removing excess salt. Now we fill them with the finished paste and put them in the dishes, which can be tightly closed. We pickle them for two days, and refrigerate before use.

Since we are talking about oriental cuisine, I would like to finally talk about how you can cook fresh cucumbers in Chinese. For cooking you will need:

  • 8 eggs;
  • 2-3 cucumbers;
  • 100 g of chicken broth;
  • 40 g maotai (Chinese rice vodka);
  • 2 tablespoons melted lard ;
  • salt and pepper;
  • greens.

In this recipe, instead of vodka, you can add dry white wine to cucumbers. So, we cut the cucumbers into cubes, beat the eggs. Then mix them, add vodka or wine, broth and spices to taste. The resulting mixture is placed in a pan with well-heated fat and fry. Then pour in 1 tbsp. a spoonful of melted fat. Before serving, sprinkle the dish with finely chopped herbs.
