Baking a loose cake for a homely tea party is a great idea! Where do we start? The most popular are those products, the recipe of which we will test today directly in the kitchen. Loose apple pie, pastries with jam or stuffed with sweet cottage cheese - all of them will make the evening warm and memorable. It is necessary to cook each of the above in order to choose the most beloved and make it an integral part of home tea drinking.

No need to engage in lengthy preliminary manipulations, it is enough to prepare friable dough for a pie and, having laid out the filling, you can send it to the oven. It is better to take a sour dessert. Jam from currants, apples and berries, in which there is a lot of pectin, is perfect. The list of products for this crumbly cake:

  1. Butter - 200 grams. You can replace this component with margarine.
  2. Sugar - 150-200 grams.
  3. Raw yolks from eggs - 2 pieces. It is allowed to introduce one whole egg instead, but you should be prepared for the fact that the crumbly cake will not be so tender.
  4. Jam - about 1 glass.
  5. Flour is half a kilo.
  6. Jam for toppings or thick jam.
  7. For flavoring, you can use citrus zest.

Any recipe for crumbly cake begins with the correct technology for preparing its base - dough. There are some small tricks here. Oil for it is better to use slightly melted. Cut it and grind with granulated sugar. Enter the yolks. Mix again quickly. No need to achieve a uniform consistency. To make a crumbly cake, its base, on the contrary, should resemble a crumb. Pour the flour and grind the composition with butter, sugar, yolks and zest. The resulting crumbs are sent to the refrigerator for ten minutes.

We take out the cake pan. Turn on the oven - to warm up. Lightly grease the bottom of the mold and wall. We pour a little more than half the crumbs to the bottom. We level it with a spoon or hand - to whom it is more convenient. Barely crushing the future lower layer of the pie, crush it. Put jam on the surface. The surface of the entire product is covered with the remaining dough and evened out. We send the blank for forty minutes into the bowels of a hot (180-200 degrees) oven.

  1. Flour - 2.5 cups.
  2. Margarine (or butter) - 200 grams.
  3. Sugar - 1.5 cups. Half a cup goes to prepare the filling, the rest - to the dough.
  4. Powder baking powder - 1 teaspoon without slide. Can be replaced with the same amount of baking soda.
  5. Eggs - 3 pieces.
  6. A pound of cottage cheese.

Getting started creating a hearty pie

  1. Give the butter (margarine) two to three hours to lie outside the refrigerator. Grind it, grinding with a glass of sugar.
  2. In flour add the entire norm of the loosening agent, gradually introduce this mixture into the composition. It should be crumbling mass.
  3. We send the resulting dough to the refrigerator while we are engaged in the creation of the filling.

Beat all three eggs and half a glass of sugar. It is better to use a mixer for this procedure, but you can limit yourself to a fork or a spoon. Introduce cottage cheese gradually, continue whipping. When the mass acquires comparative homogeneity: it will begin to resemble the consistency of thick sour cream, which means that the filling is ready.

Next, as in the first case, we heat the oven. We coat the form with lean oil and spread some of the crumbs from the dough. We spread all the resulting curd filling on top. We fill the top with a piece of crumb, level it and send it for forty minutes into the bowels of our oven. As soon as the baking is ready, we take it out, but do not pull it out of the mold in order to avoid destruction. We wait half an hour and now without loss we release the cake from the mold.

Chocolate flavor diversifies the pie with cottage cheese filling. What is needed for baking:

  • flour - 400 grams;
  • margarine - 200 grams;
  • powder cocoa - 4 tablespoons;
  • cottage cheese - 400 grams;
  • sugar - 250 grams;
  • eggs - 4 pieces;
  • yogurt (cherry flavor) - 100 grams;
  • vanillin;
  • salt is a pinch.

Cooking steps

Mix half a glass of sugar with cocoa. Combine this mixture with butter and flour, add salt to make crumbs. Cool the resulting base in the refrigerator.

Drive eggs into a deep bowl and add all remaining sugar. Stir and introduce cottage cheese. Add yogurt and vanillin.

Prepare the mold (detachable) by coating the bottom and sides with oil. Lay out part of the loose base. Count so that this cake is slightly thicker than the top. Pour the filling of cottage cheese and yogurt onto the surface. We close the workpiece with the remains of crumbly crumb from the dough. We invite a spoon with the top of the future pie.

We heat the oven to a temperature of 180-200 degrees. We put inside the preheated oven a cake form for 40–45 minutes. When the cake is baked, open the door of the oven and let it stand for ten minutes in such conditions. Now take out, but not in a hurry to get out of shape. You must wait at least another thirty minutes until the baking is completely cooled to room temperature. After this time, we release the cake from the mold and serve for tea.

What we will cook from:

  • flour - 300 grams;
  • sugar - 150 grams;
  • margarine (or butter) - 150 grams;
  • a pound of apples (it is advisable to take green, fragrant varieties);
  • water - 200 milliliters;
  • sugar - 5 tablespoons for the filling;
  • potato starch - 1 tablespoon;
  • vanillin or vanilla sugar.

First, prepare the basis for baking. Grate chilled butter (margarine) on a coarse grater, quickly grind the chips with flour until a crumb is obtained. We ship to a cold place.

While the baby is cooling, prepare the apple filling. We wash and clean every apple from inedible elements. Do not forget to take out the seed box. Cut the fruit into medium cubes. If the flesh has darkened, then you should quickly sprinkle lemon juice on apple cubes.

We take a small pan for further preparation of an unusual apple filling. Pour sugar, five tablespoons into the pan. Add vanillin or vanilla sugar to taste. We introduce potato starch into the dry mixture. Mix the composition. Fill the mixture with water and mix again, achieving uniformity.

We send the pan to the stove. Bring the composition to a boil. On low heat with constant stirring, cook the resulting jelly for no more than a minute. The mixture will gain density and ductility. Put all the apple cubes in a pan with a jelly liquid. Stir the ingredients for the filling.

In a detachable form, lay out part of the crumbs from the dough. Press the surface with a spoon to make it smoother. On top of the lower cake we put our filling of jelly and apples. Again we level the surface. With the remaining sand crumbs, close the apple layer and smooth, finishing to perfection.

Put the cake pan in the hot oven. Bake the product for at least forty minutes to a golden hue. When the cake is ready, it must be completely cooled so that the jelly filling does not leak out and the fragile base is not damaged. First cool at room temperature. You can then put the pastries in the refrigerator for thirty minutes. The cake is completely ready to eat. We take it out of the form and cut into portions. Enjoy your meal!
