However, few people know that charlotte with apples on sour cream has a rich history, according to which it began to be cooked in France several centuries ago.
A great Charlotte dessert could be made using fruits, liquor, white bread, sugar and cream. It was a gorgeous pie, for baking which took a lot of time and effort.
There are two versions of the name charlotte:
- from Old English charlyt (a sweet dish with cream);
- the name was associated with the name of Queen Charlotte, who was very fond of apples.
In the early nineteenth century, a similar Russian dessert first appeared - Charlotte Russe. He was baked by the French cook Marie Antoinette Carem, who cooked in the palace of Alexander I. Judging by what the famous culinary expert from Paris Auguste Escoffier wrote about this pie, she didnβt get a charlotte on sour cream with apples, but rather a dessert similar to β ladies' fingers β, which was even served with a scoop of ice cream and fruit.
Let's try to bake an interesting variety of apple pie "Charlotte on sour cream with apples." It is prepared using saffron baking powder, which is best suited to give a unique flavor to the dough. So, we proceed to the preparation of such a marvelous cake as charlotte with apples.
Recipe
- Sour cream - 200 g.
- One egg.
- 150 g of sugar.
- Vanillin - 1/4 tsp
- 200 g of flour.
- Half a bag of baking powder.
- 1 kg of apples.
- Cinnamon (one bag).
- A bit of dried ginger, a little nutmeg and cardamom.
All this we need to create a delicious dessert.
Cooking
Beat eggs thoroughly with sugar: whites - separately until foam, yolks - separately, until they become thick by consistency. Next, add sour cream, without ceasing to whisk. Pre-sift the flour to make it more airy, mix with baking powder and add to the egg-sour cream mixture. The dough should be thick enough, but pour. Apples need to be washed, but not peeled, cut into medium slices, sprinkled with cinnamon mixed with small amounts of ginger, cardamom, nutmeg (you must carefully add spices, the main thing is not to overdo it!). Pour half the dough into a greased form, evenly pour apples on top, fill with the remaining dough and pour apples again.
We put in the oven, preheated to 180 Β° C. We bake for 25 minutes, check the readiness with a toothpick or match.
In general, charlotte on sour cream with apples can be cooked in different ways, it is now impossible to count them all, but they will all have something in common, and each housewife brings something of their own to the preparation.
The dessert is served hot, you can add a ball of ice cream to it.
