Dogwood jam: a recipe for cooking and useful properties

Many people are familiar with the taste of apple or raspberry jam, because such types of berries and fruits can be found almost everywhere. And often you want to try something new, such as cornel jam. The recipe for this treat was known to the peoples of Transcaucasia, and, in principle, it is not particularly difficult. In the wild, this plant grows in warm places - the Crimea and the Caucasus, it is also widely cultivated in countries such as France, Russia, Italy, Ukraine and others. This berry is popular due to the high content of substances necessary for the body. So, cornel has as components various organic acids, pectins, volatile and minerals. And the content of vitamin C in the berries of this plant is many times higher compared to currants. At the same time, cornel jam (the recipe for preparation can be found below) does not lose the useful qualities of “raw materials”, since the medium (sugar) and technology allow you to save all the substances contained in the fruits without destruction.

Traditional methods of treating various ailments using the berries of this plant are known, therefore their use is often recommended for diseases such as eczema, gout, dysentery, gastrointestinal inflammation, venous insufficiency, and others.

Dogwood jam (the recipe is designed for one part of the fruit and one and a half the same amount of sugar) can be prepared as follows:

  1. Prepare berries: wash, remove all unnecessary (stalks and leaves).
  2. Mix the fruits with sugar and leave until the juice stands out (about 8 hours).
  3. Add drinking water (300 ml) to candied berries and place on a stove.
  4. You need to cook on moderate heat with constant shaking (it is better not to stir with a spoon, as this can damage the thin shell of the berries). Warm until sugar is dissolved, at this temperature, then increase the heat and allow the mass to boil (about 5 minutes), then remove from the stove.
  5. The jam should stand (about 8 hours), then again you need to conduct thermal procedures. In this case, the mass should boil for about 15 minutes.
  6. Arrange cornel jam (the recipe, as you can see, is quite simple) according to previously prepared containers and roll up.

There is also another method for preparing this treat, the main points of which are presented below:

  1. Prepare the berries (1 kg). Peel, sort and rinse the fruits. After that, they need to be placed in hot water (about 85 ° C) and blanched for several minutes (about 5). Then lay the mass in a colander.
  2. Make syrup. To do this, dissolve sugar (a little over 1 kg) over a fire with the addition of water (about 300 ml).
  3. Put the cornel (recipes for which are different) in hot syrup and leave to soak for a while (about 4 hours).
  4. Boil the mass for about 4 minutes, making sure that it does not burn.

Dogwood jam (the beneficial properties of berries were discussed above) has a special sweet-sour taste. This treat will be able to decorate the table during the holidays, and, besides, it can be used in the preparation of pies, pastries, as well as grease the meat for baking, and this gives an unusual taste of food.
