Chocolate lard

Salo is considered a national Ukrainian product. Ukrainians have long been raising pigs in order to obtain fatty meat and lard. And what dishes are not invented from this product! And even desserts! Chocolate lard belongs to this category.

More recently, chocolate lard was considered a joke. Jokes and funny stories were written about this dish. This name even became a household name and it meant something completely not tasty and not combined. However, this is a real dessert and an exquisite delicacy. Although the recipe "Fat in Chocolate" is very simple and affordable even for a novice hostess. The only problem that may arise is the reluctance of home gourmets to try such a treat. It is for these reasons that it is better to treat household members, but invite them to guess the ingredients. Most likely, not everyone will guess what it is.

Chocolate lard is prepared using raw or lightly salted lard. Chocolate is also not everyone will do. Only dark chocolate without any additives will go well with lard. It is better if it contains at least 75% cocoa. Be sure to add spices to the icing.

The recipe "Fat in Chocolate"

This recipe requires lard (from the abdominal part of the carcass). You can use a slice of slightly smoked meat. If the bacon is slightly salted, then it must be washed with salt residues. A slice is cut into thin plates, up to about 0.5 cm wide. Naturally, in this case it should completely thaw if it was in the freezer.

Next, take a bar of pure black chocolate and melt in a water bath (you can also do this in the microwave). If you drown chocolate on water, then it must be constantly stirred. Until the glaze thickens again, quickly proceed to the next step. Dip bacon into a mixture of ground spices: black and allspice, cardamom. Remember that there should be very few spices so as not to spoil the product. To do this, cardamom is taken at the tip of a knife, and peppers just a pinch. This mixture should be enough for all the lard.

Having a little smeared fat with spices, dip the plates into the chocolate icing so that it remains on all sides. After that, an unusual delicacy is laid out on foil or thick polyethylene and kept for about 8 hours in a freezer (can be left overnight).

Chocolate lard (sweets)

Salo (100 g) is cut into pieces and grind in a meat grinder, blender or processor to a paste-like mass. Then it is laid out on a flat sheet, for example, a baking sheet, in a thin layer, approximately 0.7-1 cm thick. In this form, fat is sent to the refrigerator so that it thickens a little and can be cut into portions.

Chocolate bar is heated in a water bath (this is preferable, because it is easier to control the process). In order for chocolate to melt faster, it can be broken into pieces. The finer they are, the faster and more evenly the glaze warms up. Although she cooks so quickly. In warm glaze, add butter (60 g) and ground spices: ginger, nutmeg, allspice and chili, cardamom. Each type of aromatic additives should be presented in a small amount - not more than half a teaspoon. Cardamom, chili and nutmeg are generally needed on the tip of the knife. The icing with spices must be mixed.

Further, in the forms in which the candies will be placed, glaze is poured, approximately to the middle of the height. For this purpose, you can use ice molds or special ones for sweets. Remove the fat from the refrigerator and cut into small squares or rectangles. Of course, their size depends on the size of the forms. Place the pieces of bacon in the tins and completely pour over the chocolate. After this, the candies must be placed in the refrigerator. You can eat them after 1.5 hours. But if they stay there longer, then nothing bad will happen. Here is such an interesting fat in chocolate. Sweets, by the way, turn out to be tender and piquant, and guests certainly will not immediately determine what it is.
