Udon

- 500 grams of unbleached wheat flour.
- 150 grams of bleached wheat flour.
- 250 milliliters of hot water.
- 30 grams of salt.
Dissolve the salt in a glass of water. In a deep bowl, mix the flour, then pour in salt water and knead the dough thoroughly. Form a ball from it, put it in a plastic bag, then wrap it in a cloth and lay it on the floor. While stepping in one place with your feet, trample the dough into a flat cake. Roll the resulting cake on the table, fold in half, then one more time and again send it to the trampling bag. Repeat these steps at least four times until the dough is perfectly smooth and firm. Put it in the bag in the refrigerator for four hours, then stomp it again.

Now carefully roll the dough on the table to about three millimeters in thickness. Sprinkle thoroughly with flour and fold three times, after which with a sharp knife cut into noodles no more than three millimeters wide. The resulting noodles should immediately be sent to boiling water for 5-7 minutes, stirring constantly, to prevent it from sticking together. Rinse the cooked noodles with cold running water, then add vegetable oil and mix so that it does not stick together. Now you can start cooking udon noodles with seafood. As you can see, it is not necessary to spend money on the purchase of special noodles, it can be easily prepared at home. By the way, some housewives add a teaspoon of starch to udon, but here everything is individual.
Seafood udon recipe
To prepare this yummy we need:
- Sea cocktail (grammar at your discretion).
- Some champignons.
- The root of the galangal or ginger is about two centimeters.
- Two cloves of garlic.
- A small onion.
- Half a bell pepper.
- A little carrot.
- A small stalk of celery.
- Hot pepper.
- Thai roast sauce or regular soy sauce.
- Dark sesame oil.
If you have a wok pan, then this is just wonderful. If not, it doesn’t matter. Normal will do. In it we chop galangal or ginger (that was found) and garlic. We cut onions and celery into thin half rings, bell pepper and carrots into thin strips. Hot pepper - thin rings. Champignons can not be cut if they are small. If large, then cut them lengthwise into thin stripes. Pour the whole thing with a tablespoon of vegetable and sesame oil and begin to fry over high heat.
A minute later, in a pan, add a sea cocktail pre-boiled in salted water, Thai sauce (sold in bags) or soy sauce and boiled udon. We mix all this aromatic yummy so that the noodles are painted in the color of roasting and can be served. The finished dish is sprinkled with sesame seeds for beauty.
