Recipe “Boiled pork in the oven”

Ingredients:

  • a piece of pork weighing 2.5 to 3 kg, preferably the back or neck;
  • onions - 300 g;
  • garlic - 2-3 heads;
  • carrots - 300 g;
  • mustard - 50-70 g;
  • mayonnaise - 100 g;
  • pepper - 6-8 g;
  • salt - 100-120 g;
  • bay leaf (chopped);
  • lemon juice.

  1. Grate garlic, onions, add lemon juice, chopped bay leaf, black pepper and salt.
  2. A piece of prepared meat is blotted with a paper towel, punctures are made deep enough with a sharp knife, slices of carrots and garlic (cut into long sticks with pointed edges) are inserted into the resulting “pockets” and rubbed with the resulting mixture.
  3. Leave the meat for 12-24 hours in a cool place or refrigerator to marinate it.
  4. Before you send the meat to the oven, it is greased with mustard and mayonnaise.
  5. Bake in the oven at temperatures from 160º to 180º for two to three hours. At the same time, during baking, it is necessary to turn the meat over every half hour and pour it over the allocated juice.
  6. Half an hour before being prepared, carefully scrape onions, garlic and other ingredients from the surface of a piece of meat without affecting the fat, and continue to bake until the baked pork in the oven is lightly browned, approximately 30 minutes.
  7. This truly divine dish is served, both cold and hot. Only if it is tasted hot, is it possible not to try it when it is cold, since there simply will be nothing left. Properly stuffed meat, in addition to its delicious aroma, looks attractive on the cut.
