For standard cheese pie, soft Philadelphia cheese is used, but in our stores it is still rarely seen. Instead of this cheese, we use cheese mass squeezed from fat sour cream. Cheesecake is prepared in the following sequence:
- We spread the sour cream in cheesecloth, which they fold several times, and strain it on a sieve for 5 hours. Periodically, this mass can be turned from one side to another for faster separation of serum. From the indicated mass of sour cream, up to 150 ml of serum can be released in 5 hours.
- A wide baking dish is laid out from whole cookies. The rest of the shortbread cookie is painted to a fine crumb and spills out to the bottom of the mold.
- The whites and yolks of the eggs are thoroughly mixed together with sugar and vanilla. The egg-sugar mixture is mixed with the cheese mass obtained after draining the whey.
- The mass obtained by mixing is laid out in a mold, and its surface is gently smoothed.
- Melted caramel is laid on top of the cheese and egg mass. With a knife or fork, the caramel is spread on the surface so that different patterns are obtained.

Classic cheesecakes begin to be prepared by grinding cookies into crumbs. This can be easily done with a blender or with a rolling pin and a plastic bag. Softened butter is added to the resulting cookie crumbs. The whole mass is thoroughly mixed and laid out in a prepared baking dish. Baking paper can be placed on the bottom of the mold .
