Chicken dishes, the simple recipes of which are presented below, will take their rightful place on your table. To prepare them, you don’t need any special ingredients, and the result will exceed all expectations.
Chicken appetizer "Christmas balls"
A fairly simple dish that differs in its original presentation. It will look great on the New Year's table.
To make this appetizer you will need:
- chicken fillet - 300 g;
- Parmesan cheese - 100 g;
- boiled eggs - 2 pcs.;
- black olives - 12 pcs. (seedless);
- green onions - a few feathers for decoration;
- fresh dill - 1/2 bunch;
- mayonnaise - 3 tbsp. l .;
- garlic - 2 cloves;
- ground pepper - 1 pinch;
- salt - 1 pinch.
Cooking such a dish is very simple:
- Wash the fillet and boil until tender, cool.
- In a large deep bowl, place finely chopped chicken, grated cheese and eggs, finely chopped dill.
- Squeeze the garlic through a press and add to the bowl.
- Put mayonnaise in a bowl and mix well.
- Finely chopped nuts or chopped with a blender, put in a separate plate.

Well, what kind of a festive table does without aromatic, transparent and very tasty jellied meat. If you prefer not too fatty dishes, it is better to cook it from chicken.
You will need:
- chicken thighs - 3 pcs.;
- chicken fillet - 1 pc.;
- celery (root) - 1/2 pcs.;
- carrot - 2 pcs. (medium);
- onion - 1 pc.;
- leek, parsley - 1/2 bunch;
- black pepper - 8 peas;
- bay leaf - 3 pcs.;
- allspice - 5 pcs.;
- spices “For jelly” - 1 tsp;
- Himalayan salt - 1.5 tsp;
- edible gelatin - 6 tsp. for every liter of broth.
How to cook
To make the jelly delicious, aromatic and transparent, it is important to follow the rules of preparation:
- Rinse the meat and leave it in cold water for 1-2 hours.
- After this time, drain the water, rinse the meat again and pour it with cold water, put on a small fire.
- Peel and chop the celery and carrots in large pieces. Tie the leek and parsley in a bunch. Peel the onion and leave it whole.
- When the water begins to boil, remove the foam with a slotted spoon and load all the vegetables into the pan.
- Add bay leaf, a mixture of peppers and spices to taste.
- Cook the meat on low heat for about 2 hours, strain the broth, add gelatin.
- Spread randomly chopped meat on the bottom of a deep container and fill with chicken stock. Place in the refrigerator again for final solidification.
If desired, the jelly can be laid out in portions in small molds, decorated with an egg, boiled carrots, peas, greens at your discretion.
Roll
No less tasty and very similar to aspic is chicken roll in a bottle. Cooking it is much simpler and faster. Yes, and less components will be needed:
- boneless chicken (fillet, thigh, drumstick) - 1.5 kg;
- walnuts - 130 g;
- garlic (optional) - 2 cloves;
- gelatin - 40 g;
- salt, pepper and various spices to taste.
Cooking this cold chicken appetizer is easy:
- Rinse the meat well and cut into small arbitrary pieces.
- Take a pot with very thick walls, put the meat there and, without adding either oil or water, simmer on the smallest fire for about 45 minutes. Chicken should be stewed under a lid in its own juice.
- At the end of this time, the resulting broth should be poured into other dishes. Add salt and spices.
- Dilute gelatin with warm broth in a separate container as written on the package. Add to the meat, mix.
- Fry the nuts in a dry pan, finely chop, add to the meat. If you decide to use garlic, you need to finely grate it or crush it with a press and also mix with meat.
- Take a dry and clean plastic bottle, cut off the top and fill with the meat mixture. Put in the refrigerator for solidification.
- Take out the roll by cutting the bottle. Serve with toast and vegetables.
Snack roll with prunes and tangerines
Whatever you put inside such a roll, you will get a great cold snack. Chicken roll with dried fruits, mushrooms, pineapples, pears, grated cheese, melon - a lot of options.
You need to prepare the following components:
- chicken fillet - 3 pcs.;
- dried prunes - 7 pcs.;
- sweet tangerines - 3 pcs.;
- walnut kernels - 120 g;
- ground pepper, salt - 1 pinch each.
The cooking process step by step:
- Wash tangerines, peel and remove films.
- Release prunes, if they were, pour boiling water and set aside for 30 minutes. Drain and dry the fruits with a paper towel.
- Cut the fillet along, not cutting completely. Expand the layer like a book, wrap it with cling film and beat off well. Sprinkle with pepper and salt.
- Crush the nuts in a blender and sprinkle them on the meat layer.
- Place prunes and mandarin slices on top. Pour the remains of nut crumbs on top.

For cooking you will need:
- 450 g broiler fillet;
- 1.5 tsp instant gelatin soaked in 100 ml of warm water;
- 2 pinches. salt, it is better to use Himalayan pink;
- 1 pinch of pepper (black, ground);
- 3 peas of allspice;
- 4 balls (0.5 tsp) juniper;
- 1.5 tsp dry marjoram;
- 0.5 tsp coriander seeds;
- 1 tsp dried lovage;
- 3 cloves of garlic (or a pinch of dried);
- food foil or processed pig intestine.
Cooking process
Cooking a meal is quite simple:

- Put meat mass on each piece of film and form a sausage. Wrap the film so that it feels like candy.
- Hit each sausage several times on the table to remove excess air. Tie the ends of the film and squeeze a little into the stuffing.

Now sausages need to be boiled. This can be done by simply immersing them in boiling water for 30 minutes, or you can cook the dish for a couple. To do this, it is better to use a double boiler or an ordinary pan with a special liner. Ready-made sausages must be immediately deployed or at least cut off the ends in order to get rid of excess moisture. When the dish has cooled completely, the sausages can be cut and served.
Chicken strips
The favorite dish of those who at least once visited McDonald's or KFC fast food chain establishments is, without a doubt, meat nuggets. It turns out that you can cook such a cold appetizer of chicken at home. Her taste will be no less pleasant.
To prepare a sufficiently large portion, it is necessary to prepare the following ingredients:
- 4 chicken fillets;
- 1.5 tsp salt;
- 1 large pinch of chili powder;
- 1.5 tsp fragrant black pepper;
- 2 tsp paprika powder.
To prepare the dough:
- 1.5 cups flour (or more to the desired consistency of the dough);
- 1 cup of milk;
- 2 eggs;
- 2 tsp pepper;
- 3 tsp sweet paprika powder;
- 2 pinches of salt;
- 3 tsp dry chili powder;
- 2 pinches of dried garlic;
- 1.5 tsp ginger powder;
- 0.5 tsp turmeric.
For sprinkling:
- 0.5 tbsp. flour;
- 3 tsp starch (corn or potato);
- 1 liter of sunflower oil for frying.
What do we have to do
To make a cold chicken appetizer tasty and aromatic, you should strictly adhere to the algorithm below:
- Rinse the meat, pat dry with a tissue or paper towel. Cut into strips the size of the index finger.
- Mix the spices, sprinkle them with meat strips and leave for 1-2 hours.
- Mix all the components for the dough with a whisk, a fairly dense mass should be obtained. Leave the container with dough for 15 minutes to swell gluten.
- Pour oil into a pan with high walls and heat to 160 ° C. In the future, it is necessary to monitor the temperature so that the meat strips do not burn, but evenly fry inside.
- Combine flour and starch in a separate deep bowl.
- Dip the meat strips in batter and roll in flour with starch. Pieces of chicken should be taken with tongs, shake off excess sprinkles and lower into deep fat.
