Turkish delight, the recipe of which can be easily reproduced at home, is the most famous Turkish delicacy.
The so-called turkish delight has a unique texture and taste. To make Turkish Turkish delight at home, the recipe of which we will consider in this article, we need very simple ingredients. The cooking process is also available even to beginners.
List of ingredients and step by step recipe
You need water (4 tbsp.), Citric acid (2 tsp.), Corn starch (it is softer, but you can at least potato; you need one full glass), sugar (4 tbsp.) And your favorite nuts ( optimal pistachios, cashews, but you can also cook delicious Turkish delight with walnuts or peanuts). The real recipe for this treat is not a secret, and all the subtleties can be reproduced in your own kitchen.

Start by preparing a mold where you will pour the sweet mass, which after solidification will turn into Turkish delight. The recipe suggests that it must first be greased with vegetable oil, then put in a cling film and again anointed with oil. In a small saucepan, cook the syrup from all the sugar, one glass of water and half the specified amount of citric acid. When the mixture reaches a boil, it must be covered with a lid and boiled for five minutes. Then, having removed the lid, it is necessary to boil the syrup before the sample on a hard ball. If you have a sugar thermometer, then just maintain the temperature at 130 degrees Celsius for forty minutes. If this is not possible, wait for the syrup to thicken and turn yellow. After that, scoop up a small amount with a spoon, dip it into ice water and see if it keeps its shape.
If it does, then the syrup must be removed from the heat and, having covered with a lid, cool.
Further cooking steps and process comments
Separately, cook a paste of the specified amount of starch, three glasses of water and citric acid. In three minutes the mixture will thicken very much. Then it is necessary to pour in all the sugar syrup, stir and cook for another 20 minutes. The mixture will become transparent and elastic. You need to cool it, add flavorings (for example, roasted nuts, extract of vanilla, almond, orange blossom). After five hours, Turkish delight (the recipe does not require cooling the sweet mixture) will become hard. Then it can be cut with a knife or with the help of molds, roll in starch and icing sugar. In order for you to get a soft and high-quality Turkish delight, the recipe must be tested in advance with a small amount of ingredients. Also note the following details:
- When sugar syrup is mixed with starch paste, their separation occurs. No need to be scared, after a while (if you diligently knead) the mixture will brighten and become uniform. Please note that the fire on your stove should be minimal all this time.
- Turkish delight will be a natural yellowish color due to caramelization of sugar in syrup. If you want to give it a different color, use food coloring or add a thread of natural saffron (it will give Turkish delight a rich lemon shade).
