Delicious vegetable casserole with mushrooms, cheese or minced chicken

Perhaps every housewife knows how to make a delicious vegetable casserole. But if you do not have your own specialty recipe or you are looking for new ways to cook this dish, the article below will help you to replenish your cookbook with appetizing and fairly simple ways of cooking vegetables.

For the dish you will need the following ingredients:

  • 1 medium squash weighing up to a kilogram or 2 small;
  • 1 small eggplant;
  • 2 medium tomatoes;
  • a handful of mushrooms;
  • 200 grams of minced meat of your choice;
  • small onion;
  • grated hard cheese - the more the better;
  • spices and salt.

Mushrooms, if large, cut and boil. Chop the onion finely, put in a pan and brown until golden, then add the mushrooms. Cook, stirring a couple of minutes. Zucchini peel and large seeds, cut into circles, the same thing needs to be done with eggplant. Salt the vegetables, and then put them in a baking dish in separate layers: first, zucchini, then eggplant, evenly distribute the minced meat, finish with tomato slices and onions with mushrooms. The vegetable casserole will be ready in 20 minutes, after the indicated time, remove the dish from the oven, generously sprinkle with grated cheese and send to the oven for another five minutes. It will turn out a beautiful cheese crust.

To prepare a tasty dish, remove from the refrigerator:

  • 1 zucchini weighing 600-800 grams;
  • 2-3 potato tubers;
  • butter - 3 tbsp;
  • 2 tbsp wheat flour
  • 2-3 tbsp milk;
  • 100 grams of chopped cheese;
  • 1 egg, salt and spices.

Wash and peel the zucchini and potatoes, and then cut into thin slices. Put vegetables in a baking dish or baking tray (greased), season with salt and season with spices. After, prepare the sauce, thanks to which the vegetable casserole will acquire its unique taste: fry the flour in butter (it is best to do this in a small saucepan), then pour in the milk and cook for a while until the liquid thickens. Cool a little and add the egg, salt. Pour vegetables with this sauce, sprinkle cheese on top of the dish and put in the oven for 20 minutes.

What could be better than a combination of vegetables and tender poultry? To prepare a beautiful and tasty dish, remove from your stocks:

  • a pound of ground chicken;
  • large onion;
  • 2 large ripe tomatoes;
  • 1 pc. potatoes and bell peppers;
  • a couple of spoons of sour cream, a sufficient amount of hard grated cheese - 100-150 grams, spices and vegetable oil.

Chop the onions thoroughly - this can be done in a blender or meat grinder (or just chop with a knife). Mix the mixture with minced chicken, salt and sprinkle with pepper, you can also take spices for meat. Crush tomatoes and peppers lightly, and grate potatoes on a coarse grater. All a little salt. In the baking dish, first place the minced meat, potato mass, pepper and tomatoes on top. Pour sour cream, generously sprinkle with cheese and send to the oven to brown (set the temperature to within 200 degrees). After 30-40 minutes, the vegetable casserole will be ready. It can be served with sour cream or natural yogurt, as well as a salad of fresh vegetables.
