Everything is simple! For cooking, we need:
- 700 g of rye flour;
- 600 g of milk;
- kilogram of fillet (pork - 500 g, beef - 500 g);
- kilogram of sifted wheat flour;
- 5 onion heads;
- 3 tablespoons of sunflower oil;
- 2 teaspoons slaked soda;
- 1 head of garlic;
- 15 pieces of chicken eggs.
Cooking dough for quiches
First you need to knead the dough. How to cook it? We take a measuring glass, we find the division for flour on it, you can use a 100-gram glass or scales. Pour rye flour into it to the mark of 700 grams. If you have a glass, this will be seven glasses.
Pour the measured flour into a bowl in which the dough will be prepared. In it, we introduce a kilogram of wheat flour and 3 eggs, slaked soda and add to the dough. Pour 600 g of milk. - ram bones - 200 g (for broth).
What to do about it?
Soak the peas. Cook the meat broth on the bones until tender and pour the soaked peas into it. Then we take the potatoes, cut them into small cubes. Now you need to cook nougat. We make sour dough, add eggs to it, melted butter, mix. Cut the kneaded dough into identical small pieces, then we cut these parts into thin bundles. Add chopped nougat to the broth with potatoes 8 minutes before the soup is ready. Then boil until fully cooked.
We cook separately the mutton without bones, cut the greens. Serve the finished soup with peas on the table. We put chopped greens and boiled meat in it.
Cooking salad
In order to make a delicious salad, you do not need a lot of skills. It is enough to adhere to the recipe for Udmurt cuisine. The combination of incoming products perfectly affects the taste of this magnificent product. The composition of the Udmurt dish includes:
- potatoes - 400 g;
- fat sour cream - 200 g;
- acetic acid;
- cucumbers - 150 g;
- parsley -1 bunch;
- green onions - 50 g;
- lettuce;
- salt - 3 pinches;
- sugar - 2 teaspoons;
- radish - 200 g.

Grind raw eggs with flour and salt. We boil milk. When it warms up a bit, take literally two tablespoons and add to the eggs with flour. The diluted mass is gradually poured into boiling milk. We make gas to a minimum. Stir constantly so as not to burn. When the sauce thickens, you can turn it off - it is ready. Now pour it into the cabbage.
Ingredients for Sauce and Cabbage

- sunflower oil - pour to taste;
- milk - 250 grams;
- salt is preferred;
- eggs - 3 pieces;
- flour - 4 large spoons;
- ground crackers - 3 tablespoons.
Squash with lamb
Cut the lamb into small pieces, put in a cookware and pour water. Bring the water to a boil, pour the cereal, bay leaf, pepper, salt to the meat and mix. When everything is almost ready, add onion, washed raisins. Mix the contents and cover, bring to a state of full cooking. Turn off the gas.
Now prepare the zucchini. We clean them from the peel and seeds. We cut in rings, fry in oil until incomplete readiness.
We chop the washed tomatoes. Add the zucchini rings to the lamb and grits. Then we cover with tomatoes. Preheat the oven and set the contents to bake until fully cooked. We take out, decorate with parsley and dill.
