Sichuan Pork: Cooking a Chinese Stir Fry

You will need:

  • four tablespoons of starch;
  • two chicken proteins;
  • two heads of onions;
  • two pods of hot pepper;
  • twelve cloves of garlic;
  • a pound of pork meat (without fat);
  • six sweet, fleshy peppers (preferably different colors);
  • 150 milliliters of soy sauce;
  • two tablespoons of vodka;
  • one glass of chicken broth;
  • two tablespoons of granulated sugar;
  • 600 grams of melted pork fat;
  • salt.

Creating a spicy oriental dish

Rinse the meat under running water, then dry it with a paper towel. Cut the pork into large cubes (about 3-4 centimeters). Place the meat pieces in a deep bowl, lightly salt and mix thoroughly with your hands.

Beat the egg whites with a fork until bubbles appear. Add to the resulting mass one and a half tablespoons of starch. Mix well. Quickly dip each piece of pork into the mixture, and then lay it on a flat plate. Place the soaked meat in the refrigerator for 15-20 minutes.

At this time, prepare the rest of the ingredients needed to make Sichuan pork. Sweet pepper free of seeds and stalks. Wash the product under running water, and then cut into strips or squares. Hot pepper also needs to be cleaned of seeds, cut the tail, and then rinse thoroughly. Chop this product as small as possible. Hot pepper should give the dish its sharpness, but not be felt in it. Peel the onion and garlic and rinse. First cut into small cubes, grind the second using a special press.

Place half the pork fat in the pan. Send the container to a fire and heat it up strongly. Put slices of sweet and hot pepper in fat. Fry, stirring constantly, over high heat for several minutes. Put the vegetables on a clean plate (along with fat).

Put the second part of the lard on the pan and heat again. Place pieces of meat in it and fry over high heat until a golden crust appears on all sides. During the process, the product should be constantly stirred so that it does not burn. Place the finished pork in a separate clean bowl.

Fry onion and garlic on the remaining lard. When the vegetables have a pleasant golden hue, add meat and pepper with the remaining fat to them. Pour in vodka and soy sauce, pour sugar. Mix all the ingredients well with a wooden spatula.

Cover the pan and lower the heating temperature to a minimum. Stew pork with vegetables for 10 minutes.

Prepare the sauce at this time. Add the remaining starch to the chicken stock and mix well to achieve a uniform liquid consistency. Add the finished sauce to the pan after the specified time.

Again, increase the heat to maximum and fry all together for another 5-6 minutes. Do not forget to stir the contents of the pan regularly.
