Surely many lovers of feasting wondered about what is the secret of first-class pizza. This dish can include a wide variety of ingredients for every taste. But any vegetable pizza recipe contains such an important ingredient as dough. The dough can be lush or thin, depending on preferences - as well as the filling can be absolutely any in accordance with the tastes of the cook. In these recipes we pay attention to vegetable, vegetarian pizzas: with proper preparation, such options will not be inferior to the classic meat options, and sometimes they even surpass them!

It is the delicate mozzarella that has just been taken out of the brine that can give the dish the very attractive effect of ductility, when a lot of the finest cheese strings stretch from one piece of hot pizza, so exciting appetite. The remaining cheese varieties, including parmesan, will be a great addition to the dish.

Cheese pizza is very easy to prepare. After all, for her, you just need a base of dough and cheese! And, of course, tomato paste with basil - not a single pizza can do without it.

The most famous pizza "4 cheese" in its classic form includes mozzarella, parmesan, gorgonzola and emmental. However, here you can choose at your discretion.

Many are convinced that vegan pizza without meat cannot be pizza, and even more so it cannot be tasty at all. Moreover, many of these representatives even refuse to try, and they lose a lot, by the way. Everything rests on a big mistake: many vegetable pizza recipes can give odds to any meat pizza, especially considering that meat is often replaced with dubious sausages. In addition, making vegetable pizza is quite simple: you only need ready-made or hand-made yeast dough, seasonal vegetables and a little greens.

Ingredients

So, for a pizza recipe with eggplant and tomatoes you will need:

  • Pizza dough;
  • 1 eggplant;
  • 0.5 kg of tomatoes;
  • 1 bell pepper;
  • 5 sprigs of basil;
  • 50 g of parmesan;
  • 150 g mozzarella;
  • 1 onion;
  • 1 tbsp. l capers;
  • 2-3 stalks of green onions;
  • oregano, salt, sugar, wine vinegar.

Tomato sauce

When cooking any pizza, you should not forget about tomato sauce - this is an essential component of this Italian dish, even if it is vegan pizza. A lot of sauce is not required, and you should not immediately rush to ketchup or a can of tomato paste: homemade tomato paste will be both tastier and healthier. To do this, only fresh tomatoes are needed: they need to be scalded with boiling water, peeled and disposed of. Grind the pulp with a blender until smoothie, where we add a teaspoon of sugar, as well as salt and pepper to taste. Next, the sauce is stewed under a lid until it becomes sufficiently thick.

Preparing the filling

Peel the onion and cut into thin strips, add wine vinegar to it and leave to marinate for about an hour. Meanwhile, we cut the eggplant into thin slices and fry in vegetable, preferably olive oil, until a golden crust appears. You can sprinkle eggplant with salt.

Sweet pepper must be baked so that the outer peel is easily detached. Seeds are removed, and the flesh is cut into strips. Finely chop the greens and spring onions (feathers only). Cut the remaining tomatoes into thin slices.

Roll out the dough and put it into a mold previously greased with vegetable oil - this way the dough is better baked and does not stick to the form. Ideally, the thickness of the dough in the mold should not be more than 7-8 mm: after baking, it will rise slightly and become more magnificent. Pierce the dough with a fork in several places so that it does not rise from the temperature during baking.

Next, grease the dough with our homemade tomato sauce: the side should be especially carefully lubricated, because it usually gets the least tasty filling. Next, sprinkle the dough with chopped basil sauce: it is better to put the greens just below, and not sprinkle on top, because during baking the greens dries out at one point and can even become charred, which certainly does not contribute to a pleasant taste.

The next layer is fried eggplant. We spread them evenly throughout the pizza: it is better to press them a little to the dough, as if slightly pressing in, but not too much. Rinse pickled onions with cool water to get rid of the obsessive taste of vinegar. The washed onions are also spread over the entire surface. Sprinkle pizza with a pinch of dry oregano on top. Now the time has come for straws of baked pepper - it will add tenderness and piquancy to the dish.

It's time to add pizza to the main element - cheese. We get mozzarella from brine and three on a coarse grater. Some vegetable pizza recipes suggest slicing mozzarella slices on pizza, but in this case the cheese will melt and remain large spots. Grated cheese will be distributed evenly over pizza. Soft mozzarella in the middle of the pizza will create an appetizing tenderness and viscous strings of cheese that everyone loves so much.

It remains only to beautifully lay out the circles of tomatoes, and then sprinkle the pizza with finely chopped onion and capers.

The final touch is finely grated parmesan. He will add a sharp note to the dish and glue the filling slightly, preventing it from crumbling right in the hands. It will not be superfluous to sprinkle pizza with olive oil.

Baking

Some chefs recommend leaving the pizza topped for 10-15 minutes to make the dough even more magnificent. However, lovers of thin dry pastry can neglect this advice in order to achieve the desired property.

According to the recipe for vegetable pizza, baking is only 20 minutes in the oven at 200 degrees. However, the oven in each house has its own characteristics, so after 15 minutes of baking it is better to carefully monitor the readiness of the dough, so as not to let the pizza burn.

The finished dish is cut into 6 or 8 triangular slices using a roller pizza knife and served on the table. For serving, you can decorate pizza with a small bunch of fresh basil leaves: this will give pizza spice and appetite.

Of course, pizza must be eaten hot - so it tastes the most. Pizza warmed up later will no longer have that unique taste and will lose the ability to melt in the mouth.
