A lamb leg in a foil with vegetables can be a great idea for a casual or festive dinner. In Poland and the Czech Republic this dish is considered national. Here is a detailed recipe.

Usually, lamb is not completely baked. The meat remains a little pink inside. But this way of cooking will make lamb juicy and tender. If you want to get a similar result, then set the time to 1 hour 10 minutes. Fans of well-fried meat need to increase the baking interval to 2.5 hours. Of course, the time will depend on the size of the selected piece. The larger it is, the longer it will take to cook it. When choosing meat, give preference to a young and low-fat lamb. Then the finished dish will turn out to be especially juicy and aromatic.

For this recipe you will need the following products:

  • a lamb leg weighing about 2-2.5 kg;
  • several heads of garlic (about 10-12 teeth);
  • a bunch of cilantro;
  • salt, freshly ground pepper of various types (white, black, pink);
  • a few tablespoons of oil (sunflower or olive);
  • small or medium sized potatoes with a total weight of about 1.5 kg;
  • bay leaves;
  • a quarter pack (about 50 grams) of butter;
  • cherry tomatoes - 10-12 fruits;
  • foil and wooden skewers (toothpicks).

So, you should start with the preparation of meat. Thoroughly clean the foot from the films. Peel the garlic and cut each of the teeth in half. Wash the cilantro, dry and cut into smaller ones.

In the mutton leg, make incisions: vertical, a couple of centimeters deep. In each of them you need to put half a clove of garlic. Prepare a mixture of a spoonful of salt, two tablespoons of pepper and a specified amount of vegetable oil. In the incisions along with garlic, put a small amount of this mass. Lubricate the leg with oil, rub with the remaining garlic mixture. Leave to marinate for half an hour. The meat is saturated with the aroma of spices and spices.

Bake a leg of lamb in a large baking sheet. It must be lined with foil in two layers. Tear off the required length so that the foil completely covers the leg. Now put the meat in the middle, carefully wrap - the juice should not leak anywhere. We bake a lamb leg either 1 hour 10 minutes, or 2.5 hours - depending on what degree of roasting you like. The oven temperature should be around 180 degrees.

4 step

We bake a lamb leg in the oven and at the same time prepare a side dish. Take the potatoes, peel it, boil until half cooked. You can add a couple of bay leaves and cloves of garlic to the potato broth. So it will become more fragrant.

In a pan, heat two types of oil: vegetable and cream. In it, fry the potatoes until ruddy. Pepper, put the salt.

Wash the cherry tomatoes . Do not remove the stalk from them, it will be an additional decoration for the dish. Take toothpicks or wooden skewers according to the number of prepared tomatoes.

After the meat is baked, you need to get it out of the oven and carefully open the edges of the foil. Insert the skewers into the lamb leg, put a cherry tomato on each of them. Now put the meat back into the oven without covering it with foil. As soon as the surface is browned (this is approximately 10 minutes), take out a leg of lamb. You do not need to keep longer, otherwise the meat will dry out.

8 step

Transfer the meat to a large dish. Wrap the bone in white paper. Pour potato with lamb juice, put around the legs. Decorate the dish to your liking (you can put greens) and serve. Eat lamb hot. Dry red wine is wonderful for her.
