Braised lamb with vegetables in wine
For cooking you will need:
Lamb - half a kilogram;
Onion - 2 pcs.;
Garlic - a few cloves;

Garlic and onions should be chopped and sautéed over low heat. Fry the zucchini whole, then cut into cubes when it cools down. Cut pepper, fry and pour red wine into it. Scald the tomatoes, peel them and add to the remaining vegetables in the pan. Then take a clean frying pan and saute the lamb separately. It should be seasoned with spices and salt before frying.
Then it is necessary to place the meat in a baking dish, preferably with thick walls. Then add the fried vegetables to the lamb and pour the sauce that formed from them. Ingredients for cooking:

The ram meat must be thoroughly washed and cut, without removing it from the bones. Now put in a pan and add water, preferably boiling water. Then put on fire, covering with a lid. Vegetables - onions, carrots, potatoes - cut into small pieces into pieces. When it boils, add potatoes, salt and pepper to the pan, then cook for about an hour. Then transfer the meat to another pan, and lay the peeled and washed eggplants on top. Then lay out carrots, potatoes and onions, a bay leaf and a couple of peppercorns. First you need to peel the carrots and cut it into small cubes. Rinse the tomatoes and cut into small cubes. Garlic needs to be peeled and cut into slices in the center. Peel the seeds and finely chop. The potatoes should also be washed and cut into small pieces. Then chop the onion into thin half rings and fry lightly in vegetable oil, adding tomato paste to it.
Now let's start the mutton. Rinse the meat thoroughly, then dry it with a paper towel or napkin. Then cut it into cubes and fry in vegetable oil until a golden crust forms. Then place in a roasting pan, sprinkle with salt and spices. Then put the garlic to the meat, top the carrots, salt again, sprinkle with spices. After that put tomatoes, chili peppers and fresh basil. Sprinkle all this with herbs and put potatoes on it. Then again salt and pepper, lay out a bay leaf and peas of black pepper. Then pour water, put on a small fire and simmer for about an hour and a half. After an hour and a half, mix everything, then put on a dish, sprinkle with chopped herbs.
