- First, prepare the dough itself. We take three cups of sifted flour, a spoonful of starch, 150 grams of vegetable oil, a little cold water, half a glass of sugar, half lemon juice, a pinch of soda, a little coriander, a little vanillin and salt.
- We will need a container for the dough, quite deep, into which we measure all the dry ingredients: starch and soda, salt and sugar, vanillin and flour (we do not pour it all at once, and leave a half cup to add later during cooking). Mix everything thoroughly.
- In the second container, measure out all liquid products: water and oil, lemon juice.
- Add liquid to dry ones. Knead the dough, adding the left flour. For a long time, kneading is not required, since it goes layered. When the dough does not stick to the table and hands, it rolls well - it is ready.
- Next, roll out a thinner layer of dough (thickness 3 mm). Cut a slice for the bottom of the pie, transfer to a baking sheet for the oven, cut the hanging edges.
- Sprinkle evenly with flour (starch) using a not too large sieve. The amount of this ingredient depends on the jam selected. And the more liquid it is, the greater the amount of flour (starch, as an option) needs to be sieved on a sheet of dough.
- Spread the jam evenly over the spoon (if desired, you can first turn it into a homogeneous mass with a blender, or you can leave berries or pieces of fruit).
- Then we bend the edges of the dough sheet, and on top decorate the cake with a net from the rest. If we are preparing a festive dish, then with the help of forms we cut out the figures, laying them on the edges and on the jam from above.
- We bake our vegetarian pie in a well-heated oven to a golden hue. Then we reduce the fire and bake another fifteen minutes on small.

For the filling: pumpkin puree - half a kilo, cottage cheese - 200 grams (pack), 100 grams of condensed milk (you can cook it beforehand), spices in the form of cinnamon, nutmeg, ginger, a few tablespoons of semolina.
Cooking "American"
- First, prepare the pumpkin puree. We clean and cut the pumpkin coarsely. Send it to the oven and bake at 200 degrees until fully cooked (it should be easily pierced with a fork or knife and have a baked crust).
- Next, prepare the dough. Melt the butter, add sugar. Then there too - sour cream. Mix everything thoroughly.
- Introduce the flour (very gradually). The mass should be very soft, oily, and not stick to your hands.
- Knead the dough with your hands. When it reaches the required consistency, distribute it in shape, making small edges at the edges. It turned out to be very oily, so you do not need to pre-lubricate the mold (you can lay parchment parchment for baking, so that later it is easier to get out).
- We send the future pie to the oven (200 degrees) for 10 minutes.
- Making the filling. In a large bowl, mix mashed potatoes with condensed milk, cottage cheese with semolina, add spices.
- We get the form with the dough layer, pour the filling gently there and send it back to the oven for another half hour at a lower temperature (160-180 degrees). Sweet pastries without eggs are ready. We take out of the oven, cool slightly and serve.
