First of all, you need to figure out how people live and what they eat. So, in many countries of the Balkan Peninsula, almost every family knows what Chevapchichi is. The recipe for this dish has been known to many since childhood and is passed on from generation to generation. However, there are many different ways to make it. For example, we can consider only a few of them.
Popular option
In Croatia or Montenegro, any hostess can tell you how to cook chevapchichi. The recipe is actually relatively simple and does not require any special knowledge or skills from the performer. To begin with, you should know that in the former Yugoslavia fried sausages made from mixed minced meat are called such an unusual name. For work, you will need the following products: for 0.5 kilograms of semi-finished meat products - 1 onion, a little salt and ground pepper, a clove of garlic and half a teaspoon of baking soda.
In principle, this is all that is needed for chevapchichi. The recipe, according to which it is customary to cook, consists of several mandatory steps:
- First, all products must be prepared. To do this, they need to be crushed in a certain way. You can simply chop the onion, and garlic - pass through the press. Instead of mincemeat, it is better, of course, to use fresh meat, which should be carefully chopped with a sharp knife.
- Combine all prepared components together, and then knead them for 10 minutes so that the resulting mincemeat is sufficiently viscous.
- Refrigerate for at least 3 hours. Better if he stayed there all night.
- After that, from such stuffing, you need to form neat sausages with a thickness of 2, and a length of not more than 8 centimeters.
- Next, the workpiece must be fried on all sides in a grill pan.
This dish is usually served with a side dish in the form of fried onions, fresh vegetables (sweet peppers and tomatoes) and fresh unleavened bread.
Original way
In some cases, such a dish is not made in the usual way. According to the cooking technique, it is sometimes very similar to oriental kebab. Nevertheless, these are real chevapchichi, the recipe of which provides for the following ingredients: 400 grams of meat (pork), onion, 1 tablespoon of dried paprika and salt, 200 grams of bacon, egg yolk, 20 grams of garlic and 10 grams of any spices or seasonings .
The process technology in this case will be as follows:
- Meat with lard must be turned into minced meat.
- Add chopped onion and garlic to it.
- Introduce the remaining components provided for in the recipe and make the final batch.
- Roll up the semi-finished product in the form of oblong sausages and put them on wooden skewers.
- Place the blanks in a pan with preheated vegetable oil and fry well on both sides.
Before serving, the improvised kebab must be put on a plate and supplemented with fresh herbs (parsley) and vegetables (tomatoes, cucumbers).
Roasting method
Initially, in the Balkans it was customary to cook national sausages on open charcoal. But today, in a modern apartment, it is difficult to repeat. How to do chevapchichi in this situation? An oven recipe is best for this. To make the dish as close as possible to the classic version, you need to take the main products in the following quantities: 0.5 kilograms of meat (lamb, pork and beef), a teaspoon of salt, 2 cloves of garlic and ½ cup chopped onion.
The cooking method basically remains the same:
- First, the meat must be chopped to the state of minced meat.
- Then add the remaining ingredients and beat the resulting mixture well.
- Roll the finished mass in the form of a cylinder, and then cut it into pieces about 10 centimeters long.
- Fold the blanks in plastic containers, cover with cling film and refrigerate for an hour. During this time, the mixture should settle slightly.
- After that, sausages need to be baked in the oven, on a baking sheet covered with parchment.
Outside, the product should be well-done and a little pink inside.
Culinary trick
There is another interesting recipe. Chevapchichi in bacon are much tastier. Moreover, to work, in addition to bacon, all the same products will be needed: minced meat, salt, onions, garlic, ground pepper and vegetable oil.
The cooking technique remains the same and includes the same steps:
- Chopping products (garlic, onions).
- Cooking the mixture. Some housewives use a blender to prepare the most homogeneous mass.
- Then, the aromatic minced meat should be rolled out in the form of even sausages and cut into pieces of the same length.
- After that, wrap each preform tightly in a thin plate of bacon.
- Now it remains only to fry the cooked semi-finished products in a pan with the addition of a small amount of oil.
Spectacular chevapchichi can be served with hot fried potatoes and a variety of vegetable slices. The beauty of this recipe is that you can immediately make large quantities of processed foods and put them in the freezer, and then use them at the right time.
Secrets of Serbian cookery
Serbian chevapchichi are not usually made. The recipe for such a dish includes a minimum amount of ingredients. It will take only 0.3 kilograms of veal, pork and lamb, 1 egg white, as well as a little baking soda, water and salt.
It takes very little time to prepare a popular product:
- The first step is to grind the meat into minced meat. This can be done with a meat grinder. And to make the mass soft and tender, it is better to repeat the procedure twice.
- Add separately whipped protein.
- Pour in ½ cup of plain or mineral water.
- Introduce the remaining components and make the final kneading until the mass becomes homogeneous.
- From the resulting mixture, roll sausages of the same length.
- Arrange the products on the grill and fry on both sides until a characteristic crust appears. This procedure is best performed in the fresh air using natural coal. So the products are additionally saturated with smoke.
