What could be tastier in early autumn than a salad of fresh, juicy freshly dug carrots? The easiest way to make such a salad is to sprinkle the grated carrot with sugar and add a tablespoon of sour cream. You get a delicious vitamin dessert.
Another simple and delicious salad of fresh carrots can be made with garlic and mayonnaise. For this, the root crop is rubbed on a fine grater, garlic is passed through the press, salted and seasoned with mayonnaise. 2 eggs are boiled, cooled, peeled and finely chopped. Mix eggs with carrots, put the finished dish in a salad bowl and decorate with greens if desired. For 6-8 large carrots, take a couple of eggs and 4-5 cloves of garlic.
Carrot Salad with Cheese.
It will take 5-6 pieces of fresh carrots, 3-4 garlic slices and 100 grams of cheese, mayonnaise. Carrots and cheese are rubbed on a grater with long strips (you can use a grater intended for cooking Korean carrots). The following salad is suitable for babies from 1.5 years old. It includes: fresh carrots, two teaspoons of canned peas, fruit juice and vegetable oil. Peel and grind carrots on a coarse grater, mix with green peas. Season the salad with a couple of tablespoons of juice and add 0.5 tsp. vegetable oil.

Required: a pound of fresh carrots, a tablespoon of sugar, a couple of onions, 5 teaspoons 6% vinegar, three cloves of garlic, a third of a teaspoon of red pepper, a teaspoon of curry seasoning, black pepper, 3 pcs. cloves and half a teaspoon of coriander, vegetable oil. Chop the carrots with long thin strips on a special grater, salt and pepper a little, add sugar and mix. One of the onions is finely chopped and fried, adding coriander, cloves, red pepper, curry and garlic, passed through a press. The second onion is also finely chopped. Fresh and fried onions are mixed with carrots, poured with vinegar and refrigerated.

The main ingredients that go into this salad are: 3 medium-sized carrots, half a teaspoon of granulated sugar, a tablespoon of 6% vinegar, onion, 3 large spoons of canned peas, a pinch of salt.
