Add 2 eggs and 2 tablespoons of mayonnaise, mix well. After that, salt, a little ground pepper and 3-4 tablespoons of flour are put in the minced meat. The resulting mixture should be similar in texture to the pancake dough, but not too liquid. Now, with a spoon soaked in cold water, the minced meat is taken in small portions and laid out on a preheated pan. It should be noted that liver patties, the recipe of which is given above, are fried very quickly, in comparison with meat or other similar products. Appetizing and satisfying liver patties are obtained with rice. To start, rice is boiled until cooked (it should turn out friable). The liver is crushed, minced onion, rice, salt and spices are added to it. The resulting minced meat mixes well, small balls are formed from it, which are breaded in ground breadcrumbs. Cutlets are fried until golden brown in a pan and stacked in a deeper, heat-resistant dish. A little water is poured here (so as not to completely cover the dish), everything is put in the preheated oven for half an hour. You can also add a little sour cream and chopped greens to the broth.
Speaking about how to make cutlets from the liver, one can not help but mention their recipe with eggplant in mushroom sauce. To do this, the eggplant is peeled, cut into two halves and left for several minutes (so that bitterness disappears). Grind the liver cooked until half cooked in a meat grinder with onions, peeled walnuts (2-3 tablespoons), eggplant. Drive the egg into the minced meat, add spices, mix well. Cutlets are formed from the resulting mass, which are breaded and fried in a pan. For the sauce, chopped onion is added to the butter melted in a frying pan, fried until golden brown, after which chopped mushrooms are added here. For a while everything is fried, a small amount of flour is poured (the more it is, the thicker the sauce will turn out). Half a glass of boiled water and the same amount of cream are carefully poured, the sauce is brought to a boil, it cools. Such liver patties, the recipe of which is quite simple, as a result are tender and satisfying, and mushroom sauce gives the taste of the dish a hint of piquancy.
If the cutlets seem to be poorly baked in a pan, you can put them in the oven for several minutes by adding a small amount of water.
