Homemade dumplings with blueberries - summer dessert

“He loved the Cossack’s divin and cheese pies ...” So it is sung in a folk Ukrainian song. It's about dumplings. I do not know how unchanged his affection for the chosen one of the heart remained, but in the summer the couple switched to another filling. Dumplings with blueberries are a favorite dessert in Podillia, Volhynia and the Carpathian region - that is, where this berry ripens in the forests. Pies are eaten both hot and cold. The latter, perhaps, are even tastier.

Blueberry Dumplings

Let's learn how to cook blueberries dumplings. We will not buy a store test, it is not accepted in Ukraine. Let's do it ourselves, from "A" to "I". We put a glass of boiled water in the refrigerator to cool. The lower the temperature of the liquid, the more elastic the dough will turn out. Pour about 300 grams of flour into a wide bowl. Add a pinch of salt. Make a recess on the vertex with your finger. The result was no longer a mountain, but a volcano with a crater. Carefully pour a glass of water into it and drive in two eggs. Using a fork, we begin to knead the dough. We chat in the "crater", involving in the connection with the egg mass an increasing amount of flour.

When the dough acquires the consistency that it can be picked up by hands, sprinkle the cutting board with flour and begin to knead on it already. Tasty dumplings with blueberries are obtained only when we do not spare the energy and time to fuss with the dough. Constant kneading leads to the fact that the gluten contained in the flour begins to swell. Thus, the dough is not clogged, but airy, melting in the mouth. By the way, this rule applies to any dumplings, regardless of the filling. So, add flour to the board and knead for at least a quarter of an hour, until the dough stops sticking to the board and fingers. Resist the temptation to just add more flour. This will make the dough too thick and may not boil.

How to Make Blueberry Dumplings

When a kolobok not sticking to the board has already formed, we remember it a little more, after which we will cover it with a damp handkerchief and leave it for half an hour. Dumplings with blueberries, as we have already mentioned, are a dessert, but this does not mean at all that the berries must be mixed with sugar. Sweetened blueberries will certainly let the juice go, and this makes it difficult to make dumplings. For the filling, we need simply sorted, clean and dry berries - about half a kilo.

Gingerbread man again we think a little, and then roll out a moderately thin layer. Cut out a glass with a glass. On each such disc we put a spoonful of berries. We pinch the ends, and then form a “pigtail”. We spread the dumplings with blueberries on a board crushed with flour.

Tasty dumplings with blueberries

In parallel with the sculpting process, we put water to heat - enough to make the pies feel free and not stick together. When the liquid boils, lower the dumplings, mix with a wooden spoon. They do not cook for long - about 4-5 minutes. Put a piece of butter in a bowl with a lid. With a slotted spoon we get ready dumplings with blueberries. Shake well with a bowl so that all the pies are mixed with butter. Serve with sour cream mixed with sugar. There are other ways to sweeten dessert. Try also to combine sour cream with condensed milk. No less delicious is this treat with whipped cream.
