The Moscow network "Culinary Shop of the Karavaev Brothers" has grown to 32 establishments in less than a decade. On the culinary landscape of Moscow, where you can sit spiritually and eat deliciously at the same time means paying a lot, the shops stand out noticeably, combining soulfulness and accessibility.
Work principles
The founder of the network, Eugene Katsenelson, has extensive experience in the restaurant business. He talks about a number of important principles that underlie each of his establishments: to be ready to carry out any task, work directly with suppliers, prepare food correctly and lay it out beautifully. All this allows us to deliver our own products to such major Moscow chains as Yakitoriya, as well as grow without investing in marketing.
The network has its own production workshop with an area of 1000 square meters, from where pastries and confectionery products are transported to establishments, however, some dishes are brought to readiness directly on the spot. At the same time, in terms of waiting for a hot dish, such as an omelet, the “Karavaev Brothers Bench” may well compete with fast food establishments. On average, 15 people work in each institution of the network.
Food and discounts
"Shop of the Karavaev brothers" combines a store and a cafe. If there are seats, there are no waiters, while absolutely the entire range can be taken out. A large variety of pastries, desserts, as well as salads, main dishes and side dishes are presented on the windows. The cafe offers fresh and tasty food according to the usual homemade recipes. It reproduces the culinary format, familiar to many from the Soviet era, but focuses on the European concept of the diversity of affordable high-quality food. We can say that the “Shop of the Karavaev brothers” is a home-food store.
Despite the fact that during lunch breaks in each establishment of the network there are lines of office workers from nearby business centers, the “Karavaev Brothers Shop” does not offer a special lunch menu. However, after 7 o’clock in the evening, a 20 percent discount applies to a significant part of the assortment, in particular bakery products.
Location
Most establishments are located near the metro in side streets near crowded streets within the Boulevard Ring. The network is gradually spreading beyond the borders of the Third Transport. The address of the “Shops of the Karavaev brothers” with which the history of this successful project began is Milyutinsky Lane, Building 15, Building 1. The largest shop currently located is located at Prospekt Mira, Building 26, Building 1.
