Tobacco chicken is a traditional Georgian fried chicken dish, which is also popular in other post-Soviet countries. To cook it, the chickens are fried in a traditional skillet called tapa. To thoroughly fry the meat, carcasses are pressed to the pan under the influence of the load. In modern cooking, special sets for plates with a heavy lid or with a screw press are often used.
Chicken is often seasoned with garlic and served with traditional Georgian sauces, the most famous of which are bage, satsivi or tkemali. Varieties of sauces for tobacco chickens are numerous, and only Georgian classical cuisine boasts dozens of items.
Bage
This is the most versatile of Georgian walnut-based sauces, cooked with either red wine vinegar or pomegranate juice. It tastes slightly tart, as sweeteners are not commonly used in traditional Caucasian cuisine.
Satsivi
This is the most famous name for tobacco chicken sauce. It is served cold. Satsivi is traditionally made from walnuts, water, garlic, a combination of dried herbs, vinegar, cayenne pepper and salt. To make it at home, you will need the following components:
- 700 grams of walnuts;
- 5 medium onions;
- 4 cloves of garlic;
- 2 tbsp. l white wine vinegar;
- 1 teaspoon dried coriander;
- 1 teaspoon of blue fenugreek;
- 1 teaspoon of brewed dried calendula;
- 1 teaspoon dry red pepper
- half tsp cinnamon
- 5 crushed cloves;
- salt.
First of all, you should finely chop the onions and add to the pan in which you roasted the chickens. Fry for 6-7 minutes. After that, put the fried onions in a bowl and use a blender to mash it.
Grind walnuts twice. It is best to use a meat grinder for this. Then add 1 tablespoon of dried tea coriander, blue fenugreek, calendula, as well as half a spoon of tea cinnamon and 5 chopped cloves. Mix thoroughly with chopped walnuts in your hands, rubbing the mixture in the process.
Put the pod of dried red pepper, 4 cloves of garlic and salt (the amount depends on your personal preferences) in a mortar and use the pestle to crush the ingredients. Add the mixture with 2 tablespoons of white wine vinegar to the walnut mass and mix thoroughly. Add water gradually, stirring occasionally. Continue to do this until the mixture has a smooth consistency.
Tkemali
Talking about the name of the chicken chicken sauce, many immediately recall tkemali. This is a sour sauce made of plums or red cherry plum. Its taste varies, but usually tends to be spicy. To reduce the level of astringency, sometimes sweeter varieties of plums are added to it. Traditionally, in addition to this fruit, the following ingredients are used in the composition: garlic, suneli hops, hot pepper and salt.

Suneli hops are a mixture of fenugreek, coriander, dill, celery, saffron, parsley, basil, thyme and black pepper seeds. It does not have a burning taste and is spicy and aromatic. The color of the seasoning is greenish yellow, and the smell and taste make it suitable for almost any dish, including tobacco chicken sauce. All herbs are taken in equal proportions, while chili pepper should be up to 2% of the mixture, saffron - about 0.1% (do not use substitutes, as this will give only color, not taste). The recipe below will allow you to cook about 60 grams, or 1/4 cup, suneli hops.
So you will need:
- 1 tsp fenugreek;
- 1 tsp dry thyme;
- 1 tsp ground coriander;
- 1 tsp dry basil;
- 1 tsp dry dill;
- 1 tsp bay leaf chopped;
- 1 tsp dry celery;
- 1 tsp dry peppermint;
- 1 tsp dry parsley;
- 1 tsp dry oregano;
- red pepper pod (chili);
- half a strip of dark red saffron, chopped.
Just mix all the ingredients thoroughly.
How to make tkemali sauce?
The recipe for tobacco chicken sauce is as follows. Prepare the following items:
- 1 kg of ripe red plums;
- 100 ml of water (or half a glass);
- 3-4 large cloves of garlic;
- small red pepper (chili);
- 5 tablespoons of chopped fresh cilantro (or 5 teaspoons dry);
- 3 tablespoons chopped fresh dill (or 3 teaspoons dry);
- 1 tbsp. l tarragon;
- 2 tsp chopped fresh mint (or 2/3 teaspoon dry tea);
- 2 tablespoons of tea coriander;
- 2 teaspoons of Suneli hops (recipe above);
- 2 tsp salts;
- 1 tbsp. l Sahara;
- 2/3 tsp ground black pepper;
- 2 teaspoons of lemon juice;
- 3 tablespoons pomegranate juice.
Cut the plums into quarters, remove the seeds and place the berries in a pan with a small amount of water (about 100 ml, or half a glass). Bring to a boil over moderate heat and simmer for 15 minutes, stirring occasionally.
Chop garlic and chili (red pepper) finely. When the plums become soft, drain them with a sieve and save the juice (this is tasty and healthy). Wipe the plums with a spoon or spatula through a sieve in the same pan where they were prepared. Add the rest of the ingredients and mix well. Cook over low heat for another five minutes. After that, cool and serve this berry-garlic chicken chicken sauce immediately or put in jars and place in the refrigerator.
Other recipes
In addition to traditional Georgian, you can use any other sauces. This is especially true if you have some free time for long processing and grinding of the ingredients. There are many options for tobacco chicken sauces, including those that do not require long cooking. They can contain a variety of ingredients, from tomatoes to buttermilk. Below are the most successful recipes that almost everyone likes.
Tomato classic sauce
Essential Ingredients:
- a quarter of a teaspoon of black pepper;
- 2 medium tomatoes, peeled, chopped;
- 2 cloves of garlic, grated in minced meat;
- 2 medium carrots, cut in half and finely planed;
- 1 cup tomato juice;
- 3/4 cup chicken broth with low salt content;
- a quarter cup of tomato paste;
- 1 teaspoon dried rosemary, crushed.
Recipes of tomato sauce for chicken chicken are classic. In the same pan in which you cooked the chicken, fry the tomatoes and garlic in the remaining oil for 1 minute. Put the carrots, fry for another 2-3 minutes. Combine tomato juice, broth, tomato paste and rosemary, pour into a skillet. Bring to a boil.
Such a sauce can be served both for dipping and watering it with a side dish.
Mustard tomato
Ingredients:
- 4 tbsp. l water;
- 1 tbsp. l Dijon mustard;
- 1 tbsp. l tomato ketchup;
- 1 tbsp. l vinegar
- 1 tbsp. l Sahara;
- 1 tbsp. l oils;
- 1 onion, chopped;
- 1 tsp salts;
- 1-2 tomatoes, diced.
In a small bowl, mix water, mustard, ketchup, vinegar and sugar. Set aside. Heat in a skillet in which you roasted chicken tobacco, 1 tablespoon of oil at high temperature. Sautรฉ the onion with 1 teaspoon of tea salt until soft, 3-4 minutes. Add tomatoes and sauce, mix well.
Indian sauce
List of ingredients:
- half a glass of ketchup;
- a bunch of green onion, chopped;
- 4 garlic cloves, chopped finely;
- juice of one lemon;
- 2 tablespoons of honey;
- 1 tbsp. l chili sauce (for example, sambala), or a teaspoon of red pepper flakes, or half a teaspoon of tea, freshly frozen black pepper;
- a quarter glass of water or as needed;
- a pinch of salt or to taste.
This tomato sauce for chicken chicken cooks pretty quickly. Combine ketchup, chives, lemon juice, garlic, honey and chili sauce in a saucepan over medium heat. Add enough water to achieve the desired sauce consistency. Bring to a boil, then reduce the heat to low and simmer for about 5 minutes until a tangible flavor appears. Cool to room temperature and add salt.
Mayonnaise and garlic
Ingredients:
- mayonnaise - 2/3 glasses;
- a quarter cup of spicy brown mustard;
- 2 tbsp. l chopped dill;
- 1 tsp black pepper;
- 1/2 tsp Paprika
- a medium clove of garlic grated (about 1 teaspoon).
This recipe for garlic chicken chicken sauce is extremely simple. Beat all the ingredients together in a medium bowl - and you're done.
Buttermilk & Onion Sauce
Essential Ingredients:
- mayonnaise - 2/3 glasses;
- a third of a glass of buttermilk;
- 1 tsp black pepper;
- 1 tsp dried dill;
- 1/2 tsp Worcestershire sauce;
- 1 garlic clove grated on a fine grater;
- 2 tbsp. l chopped fresh onions.
Combine all the ingredients together in a small bowl and mix thoroughly.
Lemon fruit
Ingredients:
- 2/3 cup lime syrup;
- a third of a glass of orange juice;
- half a tablespoon of peeled ground ginger;
- 2 tbsp. l sliced โโlemon and lime slices.
Combine lime syrup, orange juice, slices of citrus, and ginger in a blender. Beat until smooth for about 1 minute, scraping the sides and diluting with water if necessary. Transfer to a dipping bowl, garnish with onion and serve.
Broth sauce
You will need:
- 2-3 tablespoons of corn starch;
- a quarter cup of brown sugar;
- a quarter of a teaspoon of ground ginger (or a little freshly ground);
- 2 cloves of garlic, grated in minced meat;
- half a glass of soy sauce;
- a quarter cup of apple or white vinegar;
- half a glass of water;
- one and a half cups of vegetable or chicken broth.
Combine all ingredients, mix thoroughly. Pour into a saucepan and cook over medium heat until thickened. If you put this sauce in a glass jar with a lid, you can store it for up to two weeks in the refrigerator. Shake well before use.
Another Asian Sauce
Ingredients:
- half a glass of ketchup;
- a bunch of green onions, finely chopped;
- 4 garlic cloves, finely chopped;
- 2 tbsp. l honey;
- 1-2 tsp red chili flakes to taste;
- 1 tbsp. l chili paste or to taste;
- a pinch of salt;
- half tsp black pepper;
- juice of one lemon;
- a quarter cup of water to adjust the density, more as needed.
Stir the ingredients and simmer over low heat for about 5 minutes. Cool slightly and serve at room temperature.
