First you need to cook rice. If you find special rice for sushi in the store, then you only need to boil it according to the instructions. If not, then you need to weld an ordinary round according to special technology and add what is needed in it so that it has the proper taste and consistency. Note that purchased rice for sushi and self-cooked differ significantly in price.

So, first you need to prepare a dressing for rice. To do this, pour a little less than a glass of six percent rice vinegar into the stewpan, pour half a glass of sugar and a teaspoon of salt without a slide. Turn the heat on to the maximum and stir the mixture with a wooden spatula until everything dissolves. As soon as this happened and the vinegar barely started to boil, add a couple of leaves of nori seaweed there, cover with a lid and remove it from the stove. When the dressing has cooled, you need to catch the algae and discard them. Refueling is ready!

Now the pic itself. It is best to take round-grain rice, as it is also called in Russia, Krasnodar. It must be washed several times, and then filled with water and left to soak for half an hour. Then we drain the water and begin to rinse it under cool running water. Mix with a spatula so as not to damage the pictures. Rinse until water is completely clear. Then you can throw it in a colander and let the water drain for ten minutes.

Then we put the rice in a saucepan in an even layer, without pots, and fill it with cold water so that the water protrudes above the cereal by 2-3 centimeters. Cover with a lid and set to maximum heat until it boils (steam begins to beat out from under the lid), and then we reduce it to a minimum. Cook for another 20 minutes, then turn off the heat and leave to cool for another 15 minutes. The main thing is not to open the lid throughout the cooking!

Now put the rice in a separate form, better a baking sheet to pour the dressing. Ignore the croup sticking to the bottom of the pan! We level the rice with a spatula and pour the dressing at the rate of 200 milliliters per kilogram of cereal. Mix thoroughly, cover with a towel and set to cool. Everything! You can sculpt sushi with salmon!

Making sushi

We cut the salmon fillet with one motion of a sharp knife slightly diagonally to the fish fibers by the required number of layers. Pour warm water into a deep bowl and throw a couple of lemon slices. In it we will moisten our hands while sculpting sushi with salmon.

So, we moisten the fingers of the left hand and take a little rice, from which we form the palm of the sausage with slightly narrowed edges. With the index finger of your right hand, coat the top with a small amount of wasabi. Then we wet the right hand and put a layer of salmon in the palm of our hand, on which we place the rice sausage with the smeared side to the fish. With our hand we make the fish cover the rice, as if flowing around it. Done! Serve the finished dish with pickled ginger, wasabi and soy sauce.
