Pastille is an Old Russian delicacy, which is prepared from sweet and sour apples. In fact, there are many ways to prepare a delicious, delicate and soft dessert. The best varieties of pastilles are prepared in Kolomna, Tula, Rzhev and Belev. An important ingredient in this natural sweetness is egg whites, which give it airiness and lightness. The idea of โโpreparing a dish is that all the ingredients are mixed and then whipped into a very thick and lush consistency.
Then the mass is poured into a special form with a thin layer and allowed to dry for about 48 hours. Previously, it was much easier to cook - in the oven. Despite all the difficulties, modern housewives manage to do it on their own. Homemade pastille is prepared from any fruit and berries (apples, plums, pears, currants, cherries, apricots, grapes) rich in pectin. To give a sweet taste, you can add granulated sugar to it. It retains all the beneficial properties and an incomparable aroma.
Apple homemade pastille: recipe for cooking
Structure:
- a kilogram of apples;
- cinnamon and nutmeg (to taste);
- butter (10 g);
- lemon juice (20 g);
- granulated sugar - about a glass.
Also required:
- a baking sheet;
- enameled basin for cooking;
- a blender and a knife.
Wash the fruit thoroughly, cut the skin, take out the core and cut into quarters. We put the apples in a saucepan, pour water (to cover the fruit), close the lid and cook until boiled (on average 10-15 minutes). Drain the juice from the boiled apples, and wipe the flesh through a blender. Add cinnamon, sugar, lemon juice and nutmeg there, cool the mashed potatoes.
We cover the baking sheet with parchment paper, grease with butter and spread the mass in a thin layer. Then send to the oven to dry. Can be dried in the sun for several days or on a battery. Marshmallow at home is very tender and healthy. It is prepared simply, and eaten quickly.

The recipe for pastille at home made from lingonberries
Products:
- a glass of granulated sugar;
- four glasses of fresh lingonberries.
We put the washed lingonberries in an enameled or ceramic pot and send it to the oven for 3 hours (temperature about 70 degrees) until complete steaming.
After a certain time, we take out and grind with a sieve, you can grind in a blender. Add sugar in mashed potatoes. We lay the berry mass on a parchment sheet and again send it to the oven to dry for 2 hours. The dried layer is covered with mashed berry and leave in the oven. As a result, 3-4 layers should be obtained.
Ready marshmallow at home is cut into strips or slices and stored for a year. For the flavor, you can add various spices, for example, cloves. Instead of lingonberries, you can use gooseberries or black and red currants. The recipe from changing berries does not change.
