Pasta and all that is cooked from them, people primarily associate with Italy. Indeed, in this country, pasta with vegetables is the same familiar dish as lard in Ukraine.
Mediterranean option
Anyone who has no idea about Italy can start his acquaintance with national cuisine. A paste with vegetables is perfect for this. In some recipes it is called "Mediterranean". To work, you need quite a bit: for 0.5 kilograms of any paste, 2 red and green sweet peppers, a couple of onions, one large eggplant and zucchini, salt, 3 cloves of garlic, 2 jars of canned tomatoes, ground pepper, 150 grams of vegetable oil and dried herbs (oregano, basil).
You need to do everything in steps:
- Wash onions and peppers, peel and cut into large pieces.
- Fry the prepared vegetables in oil for 5 minutes, adding to the mixture 1 clove of garlic, passed through a press.
- With zucchini and eggplant do the same procedure. Work is best done on different dishes.
- Collect the products in one deep frying pan, add salt, tomatoes, herbs (a couple of tablespoons), pepper. Simmer for about 20 minutes on very low heat.
- Boil the pasta in a separate pan. Drain the water, and fill the pasta with vegetables. Products should be stewed together for 1-2 minutes.
Now the pasta with vegetables is ready, it can be safely served.
A worthy alternative
If desired, pasta with vegetables can be made much easier. To do this, you only need 400 grams of spaghetti, 1 tomato, 70 grams of hard cheese, half an onion and a head of garlic, a teaspoon of salt, 30 milliliters of vegetable oil, parsley (a couple of sprigs) and 0.8 liters of water.
The process goes in several stages:
1) Preparation of products. To do this, you need to chop the garlic with a knife, cut the onion in half rings, tomatoes into cubes, and grate the cheese with a grater.
2) Put the pasta, tomatoes, onions, butter in a pan. Pour food into water and place on the stove. After boiling, cook until the water evaporates.
3) Add the garlic, mix and leave to cook again for another 2 minutes.
4) Pour cheese, cover and turn off the heat. In just a couple of minutes, the dish will be ready to eat.
Before laying out on plates, mix it well, and then you can decorate with small pieces of fresh tomatoes.
Fragrant Additive
If you look at the dictionary, you can see that the word "pasta" has another meaning. This is a porridge-like homogeneous mass. In cooking, there is also the concept of "tomato paste." It, in fact, is a product obtained by boiling juicy tomatoes. But if you add a few more products from the garden to the usual mixture, you will get excellent vegetables with tomato paste. To prepare the dish you will need: 10 tomatoes, 2 onions, 6 cloves of garlic, 2 peppers, a tablespoon of sugar, 70 grams of vegetable oil, 30 grams of vinegar, a little salt and 2 cups of water.
The work is carried out in the usual sequence:
- Rinse all vegetables thoroughly, and peel the inside of the seeds.
- Then cut everything with a knife into medium-sized cubes.
- Pour oil into a deep frying pan with a thick bottom, put on fire and bring to a boil. Put onion with garlic and fry for 3 minutes until a characteristic odor appears.
- Add tomatoes and peppers. The mixture continues to simmer for another 10-15 minutes, until the products are softened.
- Pour ½ cup of water into the pan and continue heating for 5 minutes.
- Add the remaining ingredients according to the recipe and continue the cooking process for another 5 minutes.
- As soon as all the ingredients turn into porridge, it is necessary to tightly close the lid and leave the pan to cool the product.
If desired, the mixture can be crushed in a blender. If not, then even in its usual form, it will be a great addition to boiled rice, pasta or meat dishes.
Pasta in sauce
In Italian cuisine, dishes are often found when pasta is immediately cooked in sauce. An example of this is pasta with vegetables in a creamy sauce. Making a dish is not difficult, but only one of the products is necessary: 0.5 kilograms of spaghetti, salt, one each of different vegetables (onions, carrots, zucchini, Bulgarian pepper), ground pepper and 200 grams of cream (20% fat). If desired, you can add a little butter and cheese.
The process technology is simple:
- Wash fresh vegetables and carefully chop: carrots, zucchini and sweet pepper - with straws, and onions - in half rings.
- To start, lightly fry the carrots in a pan.
- Add chopped pepper and fry the foods together a little. Do the same with the rest of the vegetables.
- At this time, boil the spaghetti. Drain the water and sprinkle the pasta with oil and shake it so that they do not stick together in the future.
- Add spaghetti decoction to the vegetables, spices, put them out a little.
- Pour cream into the softened mixture, salt and sprinkle with pepper. The mass should boil a little.
- Put the finished sauce in a pan with pasta and mix gently.
Serve to the table better immediately, while the dish has retained a fresh smell and aroma.
Mouth-watering component
Everyone knows that Italian dishes are not just delicious. They look very appetizing and look spectacular on a served table. A vivid example of this is pasta with vegetables in Italian. It requires literally a minimum of products: spaghetti, 200 grams of any minced meat, 3 tomatoes, 2 sweet peppers, salt, 3 cloves of garlic, dill and ground pepper.
Everything is getting ready pretty fast too:
- For starters, peppers must be peeled. Therefore, it must be put in the oven for 10 minutes, and then in a plastic bag for 15 minutes. After this procedure, the film is removed easily.
- Rinse all vegetables well with water and chop randomly.
- Now the cooking process begins. First you need to slightly fry the garlic in oil.
- Then add minced meat there and mix well.
- The following are the tomatoes in the pan. As soon as they become soft, chopped peppers and spices immediately fall asleep.
- While stewing vegetables, there is time for boiling spaghetti.
Now it remains only to put everything on a plate. Pasta can be rolled up in the form of a nest, and the vegetable mixture and greens can be distributed around. But there is another option: mix the products. It all depends on the desire of the cook.
A budget option
There are situations when the house does not have a large selection of products. It can happen to anyone. For such an emergency, pasta with stewed vegetables is perfect. An ideal dish for a family dinner, and food is not enough: 250 grams of spaghetti - 1 onion, 2 tomatoes, 1 carrot, 50 grams of butter and 35 grams of vegetable oil, salt, a small bunch of parsley and aromatic seasonings.
Cooking method:
- First boil the spaghetti, drain the water and season them with butter.
- Fry chopped vegetables for 5 minutes in a hot skillet.
- Put prepared spaghetti, salt and selected spices there. Cover and simmer for 5-7 minutes.
- Arrange the finished dish on plates and decorate with greens.
You can cook such a simple dinner in just an hour. Perhaps someone can handle this even faster. But the pleasant impression and good mood that will remain after this dish will remain for a long time.
Hearty menu
Pasta with vegetables is a dish that quickly leads to satiety and makes it possible not to overdo it with the amount. Confirmation of the aforesaid is pasta with vegetables in tomato sauce. First you need to stock up on products: 0.4 kilograms of pasta (spaghetti, "butterflies" or any other), 1 jar of tomato sauce, ground pepper, 200 grams of broccoli, 150 grams of cauliflower, 100 grams of vegetable mix (corn, carrots and green peas ) and a little salt.
The whole process will take no more than 30 minutes:
- Put the cooked pasta.
- At this time, fry the vegetables in oil in a pan.
- Add tomato paste, cover, leave mixture to simmer slowly.
