Very soon, the New Year, you need to prepare something tasty, unusual, atmospheric for the festive table. How about delicious chicken in lingonberry sauce? The chicken cooked with such a sour dressing turns out to be excellent - juicy, fragrant, with a crispy crust, as from the picture. From one aroma saliva involuntarily stands out.

Ingredients
For this awesome recipe, you'll need:
- 1 chicken carcass;
- 300 g lingonberries;
- 2 sweet apples;
- 2 large onions;
- 100 ml of red wine;
- 100 g of honey;
- 2 tbsp. l soy sauce;
- 4-6 cloves of garlic;
- 100 g butter;
- salt pepper;
- several sprigs of rosemary.
The chicken baked in the oven in cranberry sauce looks festive and bright, but you can cook it and cut it, or, for example, using the appetizing parts of the carcass to your liking.
Chicken preparation
So, let's start cooking chicken in lingonberry sauce. Chicken must first be processed. If you want to bake chicken in parts, then cut it by the tendons, if not, just rinse it thoroughly inside and out. Dry the carcass with a clean waffle towel or napkin. Set aside.
Put a small bowl in a water bath, melt a piece of butter in it. Cool it a little. Peel a few cloves of garlic and pass through a press (leave a couple for lingonberry sauce), throw them in oil. Add soy sauce there, to taste a little salt, pepper, you can also add a little aromatic paprika, dried herbs. Mix the ingredients well and cool so that the oil can be rubbed into the chicken by hand.
Butter is an excellent fat for frying chicken; thanks to it, the meat is soft, aromatic, and even with butter, the chicken gets a nice crust during frying.
Scoop the melted butter with spices and slices of garlic and rub it thoroughly into the carcass inside and out with your hand. Then make a knife with deep holes in the future chicken in lingonberry sauce. The chicken should be soaked in garlic and spices, especially the meaty parts, so cut the legs, lower legs, pierce the fillet through the ribs and pour in the oil, add the garlic.
Set aside the chicken carcass for half an hour at room temperature. Periodically massage the future New Year's Eve with rubbing spices and garlic.
Frying and preparing the pan
Take a wide frying pan so that the chicken fits over the area and easily tosses and turns, calcine it, put the remaining butter. Put the chicken in the pan, directly whole, with the back to the bottom and fry until crust, turn on the sides. We donβt need to fry the chicken, just get a crispy crust.
Remove the chicken from the heat and prepare a baking sheet for roasting. Rinse a convenient shape or pan, dry and cover the bottom with foil. Put chicken on it and pour out the remaining oil, if any.
Peel the apple from the peel and seeds. Cut into slices that are not too thick. Lay these slices around the chicken, put between the legs, inside, under the wings.
Leave the chicken alone and start cooking lingonberry sauce.
Lingonberry sauce
And now weβll tell you how to cook lingonberry sauce. For this you need a blender. Lingonberries, if frozen, thaw in advance. Put the berries in a bowl and beat in a smoothie. Throw the remaining garlic into the blender. Salt lingonberry sauce, add pepper for a pleasant, spicy aroma.
Pour wine into a small stewpan, put on fire. As soon as it begins to boil, put the lingonberry mass, mix. There, in the pan, add honey. Bring the mass to a boil, while reducing the fire to a minimum. Alter the ingredients, the honey should melt.
When the cranberry sauce begins to boil, remove it from the heat and let cool slightly.
Peel the onion, cut the onion halves lengthwise into four parts and chop across the slices of 5-7 mm. Put the onions in a separate container and squeeze a little with your hands to let the juice flow.
Sprinkle the chicken with the onion, put a little inside, under the legs, between and under the wings.
Pour the chicken with lingonberry sauce. It also needs to be poured inside and rubbed well into the carcass. Spread a few sprigs of rosemary on the chicken.

We went to the finish line in the preparation of chicken in lingonberry sauce. Cover the chicken with another sheet of foil, securing it to the sides of the pan.
Preheat the oven to 200 degrees, send the chicken into it for an hour. 10-15 minutes before the timer expires, remove the top sheet of foil so that the bird takes on a crust.
