If you do not like banana beer, then perhaps you just do not know how to cook it. And if you have never tried this drink, it's time to experiment. What it is?

It turns out that the banana beer recipe came to us from Africa, and our culinary specialists have already adapted it to Russian realities. In fact, if you go into details, the drink is not a beer at all. It is, rather, a slightly fermented banana juice, which can be compared to a traditional braga.

Home-made banana beer, like African beer, does not include any colorants, flavors, sodium glutamate and other "charms" of chemical developments, unlike store beer, which is supposedly sold with the aroma and taste of fruit, but is actually replete with various additives.

To make a homemade drink, we need only 3 ingredients: water, banana juice, flour.

And don't let the process frighten you - you can get quite a worthy syrupy liquid from banana puree .

Preparation

To brew a banana beer, we need the following consumables: boiled water, ripe bananas, corn flour.

The following equipment will also be required:

  • wooden crush;
  • bowl for mashed potatoes;
  • the spoon;
  • colander / convex bottom sieve;
  • knife for trimming the ends;
  • any small pan on which the colander will hold;
  • another pan and household scales for measurements;
  • a large section of sterile cotton gauze;
  • deep plate for waste;
  • narrow-neck fermentation tank;
  • a plastic bag for her instead of a lid.

If you use bottles, you will need a container for filling with a funnel.

It is necessary to thoroughly wash all dishes with detergent and rinse with boiling water. Wash your hands thoroughly.

Making banana beer

First you need to select ripe, but not overripe bananas. Not all varieties are available on our market, but the most common variety here is that in an unripe state it has a green tint, and in a ripe tint its peel is yellow.

The peel of a stale or overripe banana usually darkens and turns brown.

In no case should you wash the bananas. We clean them from the peel, cut off the black ends.

We transfer the peeled bananas into a bowl and knead a nibbler to a puree state. As a result, we get a brown inhomogeneous mass. Knead it to make the smoothie smooth.

Next you need to hang a colander over the pan. Cover it whole with a piece of gauze. Gently spread mashed potatoes on cheesecloth. You only need to put a couple of spoons. Almost immediately, banana syrupy juice should start to ooz. Gently knead the puree with a spoon for faster draining.

Now you need to take the cheesecloth with mashed potatoes and slightly raise so that the mass hangs on the cheesecloth. Then we wrap the gauze in the gauze on top so that a spherical lump with a neck twisted on top forms. Now squeeze the juice from the puree into the saucepan until all the liquid is in the container.

The juice obtained as a result of these manipulations is diluted with cold boiled water in a ratio of 2: 1. Add corn flour - 1 part flour to 12 parts juice without water.

You can get about 300 grams of juice with pulp from a kilogram of bananas. In this situation, you need to add 100-150 ml of water and a tablespoon of cornmeal. Mix everything thoroughly, the flour should be thoroughly whipped and mixed in a liquid, without lumps.

Pour the resulting wort into any container with a narrow neck. You will need a funnel for the bottle. We set in a dry, warm and dark place, where there is no course for cockroaches and other animals. The temperature should be at least 20 degrees Celsius. Cover the container with a bag. We thus withstand the mixture for about 20-36 hours until the signs of fermentation appear: sour taste and characteristic smell. Wild yeast will do their job honestly.

Completion

Pour the fermented wort into a saucepan and bring to a boil - this will help neutralize the harmful environment. Remove the non-liquid fraction and foam with a spoon, discard. We filter the resulting liquid through a clean, dense tissue, which is pre-doused with boiling water.

That's all. Banana beer / brew ready. As a result, we have about 300-400 ml of filtered and almost pasteurized drink. His taste is sweet and sour, banana.

Notes

Specially purchased alcohol or wine yeast such as Saccharomyces cerevisiae should only be purchased if you have obtained about several tens of liters of banana juice. If live fermentation does not start even after 36 hours, you can buy pasteurized beer and drip into the prepared wort.

The procedure can be greatly facilitated through the use of various mechanisms. For example, a food processor, press, blender. Wort is filtered through gauze / cloth or in expensive industrial machines.
