Jam is a dessert made from fruits or berries with added sugar. Of course, today you can hardly surprise anyone with such a delicacy; a large assortment of various jams is sold in stores. But still homemade jam is much tastier, and more useful, because the hostesses do not use artificial ingredients when cooking this dessert.
You can make jam from almost any berries or fruits. But if the usual raspberry or cherry dainty seems somewhat mundane, then you can make a non-standard move and make orange jam.
To prepare such a dessert, you can use both peeled and unpeeled fruits. In the latter case, it is better to choose a citrus fruit variety with a thin peel, and before cooking the oranges will need to be thoroughly washed with a brush.
To make orange jam according to the classic recipe, we need a kilogram of oranges that need to be washed well and trimmed part of the peel from the side of the stem. Then cut each orange in half and remove all the bones. It is important to prevent seeds from getting into the jam, otherwise the dessert will turn out with an unpleasant bitterness. Then cut the prepared oranges into smaller pieces - in cubes or slices. When slicing oranges, a lot of juice is allocated, so you need to work with fruits on a cup or saucepan so that precious drops do not disappear in vain.
Now let's get the syrup ready. For the indicated number of oranges, we need one and a half kilograms of sugar and two glasses of water. We put the syrup on the fire, bring to a boil and remove the rising foam. Now we spread the prepared fruits in the syrup and pour the juice collected when slicing citrus fruits into the same. We cook orange jam for two hours on a very low fire, stirring occasionally so that it does not burn. Pour the thickened jam into sterile jars and roll up the lids. And you can serve this delicious treat for tea right after cooling down.
Orange jam is boiled with various additives. For example, a delicious dessert is obtained if you take in equal amounts oranges (peeled) and apricots. And you can make raw jam from oranges and gooseberries. This dessert is good because there is no heat treatment during its preparation, therefore, all vitamins from berries and fruits are better preserved.
To make such a jam is easy. Take a kilogram of gooseberries and two oranges. My citruses, remove the seeds. Then we pass the berries and oranges through a meat grinder. The resulting aromatic puree is mixed with sugar (for this amount of fruit we will need one kilogram of three hundred grams of sugar). Stir until granulated sugar is dissolved. Then we spread the jam in clean jars and cover with ordinary polyethylene lids. Keep this jam in the refrigerator.
But orange jam, the recipe of which provides for the use of citrus peels only. We pick up a certain amount of peels from oranges, put them in a pan and fill them with water. Boil the crusts for fifteen minutes, then drain the water, and fill the crusts with fresh boiling water and repeat the process two more times. Such repeated boiling helps get rid of bitterness.
Weigh the boiled crusts, then grind in a blender or meat grinder. We add sugar to the resulting puree in a ratio of one to one, that is, for half a kilogram of crusts, we need five hundred grams of sugar. Cook the jam for forty minutes, then put it in jars.
It turns out very delicious and pumpkin jam with orange. To prepare it, we need a kilogram of pumpkin, peeled and diced, as for cooking porridge. You will also need to prepare two oranges, about a kilogram of granulated sugar and three to four grams of citric acid.
Sprinkle the chopped pumpkin with sugar (those who like sweet jam can take 1-1.2 kg of sand, and those who prefer a less sweet taste can limit it to 800 grams). We wait several hours for the pumpkin to start juice. Meanwhile, peel the orange and cut it into cubes, collecting juice. We put the dishes with pumpkin on the fire, after the syrup boils, add the orange. We boil for five minutes, then turn off the heat and let the jam stand for 8-10 hours. Cook the dessert until cooked in three or four doses, then pour it into jars.
