Cooking is a complex science in which, along with strict rules, there are a lot of different deviations from them. One of the most striking examples of this case are dumplings with potatoes. Such a dish is contradictory in its name. Despite this, there are a huge number of different recipes for its preparation.
Simplest option
Sometimes housewives confuse two completely different dishes: dumplings and dumplings. These products differ in several ways:
- Type of test. For dumplings, it must be fresh.
- The composition of the filling. In the first case, it is minced meat or fish. All other options relate to dumplings. The main feature of the filling for dumplings is that it should not be sweet.
- The state of the filling. For dumplings, the mixture is prepared. In dumplings, the filling is always raw.
- Product form. Dumplings are usually made round. Although other options are known.
Violating one of these signs, you can get a product that, according to other indicators, retains its belonging to a particular species. Take, for example, dumplings with potatoes.
The simplest option for their preparation involves the following prescription.
For the test: 0.3 kilograms of flour, salt, 2 eggs, 5 grams of vegetable oil and 70 milliliters of water.
For the filling: 8 potatoes, salt, 6 onions and ground pepper.
Dumplings with potatoes are prepared as follows:
- First you need to make the dough. To do this, thoroughly mix all the ingredients in a deep bowl. At the first stage, you can use the mixer, and then use your hands to make the final warm-up.
- For the filling, vegetables must first be peeled, washed, and then chopped using a knife or modern choppers. After that, you can add other ingredients to your taste.
- Roll out the dough, and then with the help of a mold or a regular glass cut neat round billets from it.
- On each piece put a part of the filling and gently pinch the edges.
After that, it remains only to cook the finished dumplings in boiling water with the addition of salt. This may take 7-8 minutes.
Mixed filling
Considering the fact that meat must be inside the dumplings according to the rules, you can cook products with mixed filling. In fact, in this case, only one of the distinguishing features of this product is violated. The result is very tasty dumplings with potatoes and minced meat. The vegetable component here will be only a small addition. To prepare such dumplings you will need:
800 grams of flour, 0.5 kilograms of minced meat, egg, 300 milliliters of water, 1 potato, salt, 5 onions and vegetable oil.
Cooking meat and potato dumplings is easy:
- First, you can do the filling. To do this, in a meat grinder, scroll vegetables (onions and potatoes), and then add them to the meat along with salt.
- For the test, first of all, you need to beat the egg with water and 2 tablespoons of butter with a whisk. Then, gradually adding flour, make the final batch. The dough should not stick much to your hands.
- To make dumplings, you can use a special mold for modeling. After this, it is necessary to separate the piece from the test and roll it into a layer with a thickness of not more than 3 millimeters.
- Cover them with a mold and press firmly so that they slightly fall into the holes.
- Fill the resulting voids with the prepared mixture, and then cover the mold with another same layer and roll it on top with a rolling pin. As a result, the finished dumplings will be able to separate.
After that, they will simply cook. For a greater flavor, in addition to salt, you can put bay leaf in water.
Dumplings in Belarusian
From time immemorial, dumplings were considered a Russian dish. Over time, they appeared in the national cuisines of other countries adapted in accordance with local taste preferences. For example, Belarusians have their own dumplings with potatoes, the recipe of which is somewhat different from the usual version. To prepare them, you need to take:
For the test: for 170 milliliters of water - 3 cups flour, 1 egg, salt and 15-20 grams of vegetable oil.
For the filling: 450 grams of potatoes, a teaspoon of salt, two onions, 100 grams of soft cheese and 35 grams of vegetable oil.
The process technology in this case will be slightly different:
- To prepare the dough in a bowl with salted water, you first need to break the egg, and then add the butter, and beat all this well.
- Pour the flour onto the table, make a small depression in it and pour the prepared mixture there. Knead the dough until it stops sticking to your hands.
- Potatoes for the filling must first be boiled, and then, draining the water, mash it in mashed potatoes.
- Chop the onions and fry them lightly in a pan.
- Combine foods by adding the rest of the ingredients.
- Divide the dough into pieces, and then roll each part in the form of a small round cake.
- Put in the center of each of them a part of the filling and, plucking the edges, connect the ends in the form of a crescent.
After boiling in salt water, finished products must be caught with a slotted spoon and served with butter.
The main stages of the process
In fact, dumplings are lean dumplings with a filling chosen at the discretion of the hostess. True, it sometimes does not match the name of the dish. For example, there are dumplings with potatoes. A step-by-step recipe with a photo allows you to better consider all the stages of the process and notice a fundamental similarity with the standard version. For such a dish you will need:
400 grams of potato - 350 grams of flour, 2 onions, 5 grams of salt, a quarter teaspoon of black pepper, 8 grams of dill, 100 grams of carrots, as well as 30 milliliters of olive and 40 milliliters of any other vegetable oil.
The whole process consists of several successive steps:
- To prepare the dough, the flour must be mixed with salt, and then, adding 150 milliliters of warm water, knead the steep dough.
- To increase elasticity, it must be put for 50 minutes in a plastic bag.
- Boil peeled potatoes in slightly salted water.
- Chop the onion arbitrarily, and for chopping carrots it is better to use a fine grater.
- After this, the products should be slightly fried in olive oil.
- Mash potatoes in any convenient way. In the resulting mass add vegetable oil, two-thirds of the steamed vegetables and the remaining ingredients.
- Roll out the dough in the form of an even layer, and then cut circles out of it using an ordinary glass.
- Fill each workpiece with filling and fix the joints.
After this product, sprinkled with flour, can be sent to the freezer. At any time they can be taken out and boiled.
Original way
How else can you cook dumplings with potatoes? A recipe in pots is good because the product is immediately ready to eat. However, before that, each of the used semi-finished products must be made using the following set of products:
For the test: for 150 milliliters of water - 3 cups of flour, 10 grams of salt and 1 egg.
For the filling: 7 potatoes, salt, 100 grams of dried mushrooms, 2 onions and 35 grams of vegetable oil.
For the sauce: on a glass of sour cream - 10 grams of flour, as well as a tablespoon of butter and tomato paste.
In addition, 50 grams of grated cheese and the same amount of butter will need to be added to the pot.
Everything is getting ready very quickly:
- First, from the prepared ingredients, you need to knead the dough, and then, covering with a towel, leave it for 40 minutes.
- For the filling, the mushrooms must first be soaked, and then, boiled in salt water, cut and fry with chopped onions in a pan.
- For the sauce, the sautéed flour needs to be combined with the rest of the ingredients and a little blow out.
- After rolling the dough into a tourniquet, divide it into pieces.
- On each of them put a little filling and randomly fix the edges.
- Ready dumplings should be put in boiling water and wait until they pop up.
- Put butter on the bottom of the pot. After this, pour dumplings into it, pour them with sauce and sprinkle with grated cheese on top.
Next, the pots need to be sent to the oven for 15-25 minutes, having previously set the temperature in it to 185 degrees.
Complex filling
To make the dumplings taste more tender and aromatic, you can make a special filling for them. For it you will need: for 600 grams of potato - 1 egg, 5 grams of salt, 20 grams of butter, 1 gram of ground pepper, 2 onions and 50 milliliters of whole milk.
The components of the dough are taken standard: 500 grams of flour, a glass of water, 2 eggs and 10 grams of salt.
How are such dumplings made with potatoes? The recipe step by step with this set of products will be slightly different from the previous options:
- First, the potatoes must be washed, peeled, and then boiled, salted with a little water. It will take about 25 minutes.
- Finely chop the onion and fry in butter.
- Mash potatoes in mashed potatoes and add the remaining ingredients to prepare a soft filling.
- Pour flour into a bowl with a slide, add eggs and salt, and then, adding water, cook a cool dough. Before cutting, he should be allowed to stand for 30 minutes with a covered napkin.
- On a table sprinkled with flour, roll out the dough so that the layer thickness is at least three millimeters.
- Using the form, cut round blanks.
- Fill them with the filling and pinch the edges tightly.
Ready dumplings will only boil. For flavor in water, in addition to salt, you can add a little broth. Finished products are tender, soft and very tasty.
