This, at first glance, the usual first dish, it turns out, can be cooked completely extraordinary and at the same time very tasty. In many national cuisines, there is a recipe for making rice soup - without meat or with meat, with tomatoes, potatoes, beef, meatballs, fish, cheese, boiled cereal or a kernel for a grain. Winter is the time to make hearty soups, which are usually densely seasoned with potatoes, noodles or rice. Today we will tell you how to cook rice meat-free rice soup in a slow cooker - aromatic, rich and very bright. It's no secret that in winter many experience a certain deficit of bright colors, therefore they strive to bring some rich note to life: put on a scarf of warm colors, read a fascinating adventure book, eat something non-trivial at this time of year - for example, exotic ripe fruit or vegetable. And in our bins there is a recipe for soup, which in finished form is distinguished by a rich yellow-red color, which is very pleasing to the eye during cold weather.
Meatless Rice Soup: Recipe
Prepare the ingredients:
- onions (1 pc.);
- carrots (small);
- two tomatoes;
- bell pepper (1 pc.);
- rice - 30 grams (if you want to cook rice soup without meat more saturated, you should use more cereals);
- two to three potato tubers;
- vegetable oil (for frying);
- ground paprika, parsley.
It takes about half an hour to cook. From the presented number of products, three servings of the dish are obtained.
Description of the method of preparation
The recipe for this dish is not complicated:
- First you need to finely chop and fry the onions. Then they grab it with a spatula and set it aside, and in the bowl of the multicooker put a carrot, which is fried for two minutes. Ready carrots are also caught and crushed tomatoes are put in its place (it is possible together with the skin - this will not affect the quality of the soup).
- Tomatoes sprinkled with parsley (dried). After a couple of minutes, they add Bulgarian pepper, cut into small cubes.
- Vegetables are fried for about 5 minutes, while peeling potatoes and rinsing rice. According to some housewives, potatoes can be dispensed with. But many do not imagine soup without this product. But perfectly do without meat.
- Next, water (hot) is poured into the multicooker, carrots and onions (fried), rice (washed) and potatoes are added, and then the “Soup” button is pressed. For cooking rice soup without meat in a slow cooker, 15 minutes is enough.
- You can hold the finished dish for some time in a container to insist. Then the soup is sprinkled with paprika right in the pan, and pepper and garlic are added if desired.
How to cook meatless rice soup with new potatoes?
Use:
- one and a half liters of water;
- one onion;
- one carrot;
- new potatoes;
- 3-4 tbsp. l rice;
- 3 tbsp. l vegetable oil;
- half a tablespoon of salt;
- pepper (ground) - to taste;
- greens.
Cooking according to the recipe
Act as follows:
- Put a pot of water on the fire. Prepare onions and carrots. Vegetables are peeled and cut: onions - in cubes (medium size), carrots - in circles or semicircles or rubbed on a grater (large).
- The tubers of young potatoes are peeled quite quickly and easily: they remove a thin peel with a knife, then they are washed and cut into cubes (medium).
- Next, onion pass the carrots in oil. It will be enough to withstand vegetables for 1-2 minutes over medium heat, making sure that the onion does not burn (the frying must be constantly stirred for this). By dishwashing vegetables, the dish is given a special saturation, its taste will be more vivid.
- Passer vegetables are sent to boiling water, spices and salt are added, rice (washed), cubes of potatoes. Soup without meat is cooked for 20 minutes over medium heat. After this time, pepper (ground) and chopped greens (cilantro or fresh dill) are added to the rice soup.
Kharcho Soup (Lenten)
To prepare six servings use:
- 0.5 cups of rice;
- 2.5 liters of water;
- 2-3 potatoes;
- 2-3 onions;
- one carrot;
- 3 cloves of garlic;
- half a glass of walnuts;
- 1-2 tbsp. l tomato paste (or half a glass of tkemali);
- 30 grams of oil (vegetable);
- one bunch of greens (fresh);
- 1 tbsp. a spoonful of salt;
- half a teaspoon of pepper.
Cooking step by step
To make kharcho (lean) soup, you should:
- Wash the potatoes, boil in their skins until ready (20-25 minutes), then cool and peel.
- Next, the rice is washed in water (cold). Then you need to boil water (2.5 l), lower the cereal in boiling water and cook for about 20 minutes.
- Meanwhile, peeled, washed and chopped onions and garlic. Peel the carrots, wash them, cut them into strips, or grate them (coarse). Heat the pan, pour oil (vegetable) into it. Fry tomato paste in it for 5-7 minutes with constant stirring. Add chopped onions and garlic, fry for 2-3 minutes.
- Next, walnuts are crushed using a rolling pin. Then add carrots, spices and nuts to the onion with garlic. All together, fried for 3-5 minutes.
- Then the frying is added to the rice, salted to taste.
- The potatoes are peeled and diced. Spread in the pan. Cook the dish for 7-10 minutes under the lid over low heat.
- Next, the greens are washed and chopped. The soup is removed from the fire, chopped greens and garlic are added to it and insisted for about half an hour.
