How to cook white eggplant? Such a product is not subjected to special heat treatment. It is boiled, stewed and baked in exactly the same way as its "little blue" brother.
The only difference between these vegetables is that white eggplant does not contain solanine. In this regard, he is not bitter, and there is no need to soak it in salt water.
So how to cook white eggplant? The recipes for this product may vary. We will tell you about how to make a quick snack from the mentioned vegetable and roll it up for the winter.
White eggplant: recipes
Surely everyone tried to fry eggplant in a pan. Such a dish can serve as an excellent snack not only for the dinner, but also for the festive table. However, in the latter case, we recommend additionally using garlic sauce and fresh tomatoes. Only in this way you will surprise the invited guests with a very tasty, beautiful and fragrant snack.
So how should you fry white eggplant? To do this, purchase the following products:
- small white eggplant - about 2-3 pcs.;
- small salt, black pepper - use to your liking;
- wheat flour - about 2/3 cup (for dipping vegetables);
- olive mayonnaise - about 3 large spoons;
- vegetable oil - at the discretion;
- thick fat sour cream - 2 large spoons;
- medium garlic cloves - 2 pcs.;
- hard cheese (you can take any grade) - about 80 g;
- small fleshy tomatoes - 4-5 pcs.;
- fresh greens (parsley petals) - use for decoration.
Processing and frying vegetables in a pan
Before cooking white eggplant in a pan, they should be carefully processed. The vegetables are washed thoroughly in hot water and then dried with a towel. After that, navels are cut from them and chopped with 8 mm thick circles.

- white eggplant - 6 kg;
- Bulgarian pepper (use only red) - 6 pcs.;
- hot pepper - 1 pod;
- garlic cloves - 200 g;
- vinegar 9% table - 5 large spoons;
- vegetable oil - Β½ cup;
- table salt - 2 large spoons;
- beet sugar - 1 cup.
Component Preparation
White eggplant for such an appetizer is processed quite easily. They thoroughly wash it, cut off the ends and chop it in thick strips (can be divided along into 6-8 parts). After that, the vegetables are laid out in ordinary drinking water, boiled for 5 minutes (after boiling the liquid), and then thrown into a colander and deprived of moisture as much as possible.
As for the red bell pepper, it is also well washed, removing seeds and stalks. Then it is twisted in a meat grinder together with a pod of hot pepper.
Cooking process and product rolling
After the sweet pepper sauce is ready, put it on the stove and mix well. In the process of boiling, salt, sunflower oil and sugar are added to the vegetable gruel.
After boiling the ingredients for about 10 minutes, previously boiled eggplant is laid out to them. Also, table vinegar and crushed garlic cloves are added to the dishes.
By mixing the products with a spoon, they get a very aromatic and bright mass. It is boiled for exactly 5 minutes, after which it is distributed into sterilized banks.
Having rolled up the containers, they are left aside for some time (until cooling), and then they are put into the cellar. Such a dish is presented to the table only after a few weeks. They use it together with bread as a spicy snack.

- small table salt - 2 large spoons;
- drinking water - about 1 liter;
- white sugar - 2 large spoons.
Preparation of vegetables and marinade
For the preparation of winter harvesting, you can use any eggplant. We decided to purchase white vegetables. They are thoroughly washed and chopped with 1 cm thick circles. Next, separate the garlic cloves separately and crush them with a press. Combining both vegetables in the same container, they are well interfere. After that, they begin to prepare the marinade.
A mixture of water and sunflower oil is boiled in a large saucepan, where fine salt and white sugar are added in the future. After removing the dishes from the fire, table vinegar is laid out to its contents.
The process of preparing a winter blank
As soon as the marinade and the main vegetables are prepared, begin to form a snack. To do this, in 750 g jars lay out eggplant circles with garlic and immediately pour them with fragrant boiling marinade, not reaching the edges of a 2 cm container.
Covering the dishes with a lid, they put it in an enameled basin with water and bring to a boil. In this form, a winter snack is sterilized for ΒΌ hour. Over time, the marinade is added to it (right to the top) and then rolled up.
Having completely cooled the blank of white eggplant, it is sent to the pantry. To obtain a more aromatic and rich dish, vegetables are kept in a dark place for 25-30 days. After this time, you can safely present a snack to your family members.
Other cooking options
What else can you cook with white eggplant? Recipes with this vegetable can be different. If you want to make a full dinner for the festive table, we suggest baking this product in the oven. To do this, cut it in half and take out the middle part along with the pulp and seeds. Next, the eggplant boats are stuffed in any way known to you.
