Russian cuisine is famous all over the world primarily for its unique soups. One of them is pickle. Although the word itself appeared relatively recently. In Russia, such a soup with pickles was called "kalya." And they cooked it and cook it on a variety of broths: fish, meat, mushroom or vegetable. If they are large, then first peel off the rough skin and remove the seeds. Fry them in a pan for 5-7 minutes, until all the liquid has evaporated. Rinse the rice until clean water.

Pour all prepared foods after the broth is ready. First you need to put rice and potatoes. As soon as the soup boils, add onions and carrots. About fifteen minutes before the end of cooking add sautéed cucumbers and 1 cup of brine. Cook the pickle until the potatoes are ready. At the very end, add salt and julienne meat. To make soup with mushrooms, it is best to use dried or fresh forest mushrooms. They give a richer aroma and taste. The soup recipe “Rassolnik with rice and fish” usually involves the use of river varieties: catfish, sturgeon or carp. The fish must be oily enough to make the broth rich. For the rest, you can stick to the classic recipe.
