It is no secret that the most delicious preparations for the winter are salads that are prepared by the whole family. A special atmosphere reigns in the kitchen during their creation, everyone is involved, including the baby. Delicious salads for the winter from zucchini
Already these vegetables are always in sufficient quantities, regardless of whether the summer was hot or not very, rainy or arid. Of course, zucchini can be bought at any time of the year (including ice cream), but when delicious salads are prepared for the winter, and they can only be uncorked, it is much easier and more pleasant to use them.
For the simplest option, you will need 3 kg of young zucchini, 3 heads of garlic and 2 large bunches of dill. Salt (one and a half tablespoons), sugar (100 gr.), A glass of vinegar and vegetable oil are also useful.
First you need to marinate the zucchini. To do this, they are cut into medium-sized cubes, chopped garlic, dill and the remaining ingredients are added. All this should be done in a sufficiently large capacity, which in the future can be put on fire. Salad is pickled during the day. Then it is brought to a boil and cooked, stirring, for about 10 minutes. The finished dish is distributed in clean half-liter jars, sterilized for 15 minutes and closed. It will take minimum time to prepare this dish, and with the onset of cold weather all the efforts expended will certainly be appreciated.
Delicious salads for the winter from different vegetables
Those who have a little more time can be advised to prepare more complex options. For example, assorted salad according to the following recipe. For 10 kg of ripe soft tomatoes take 2 kg of carrots, onions and cucumbers, as well as 3 kg of bell pepper. Still need 200 gr. salt (in no case iodized), 300 gr. sugar and 400 gr. refined vegetable oil.
You can close such a salad in jars of any volume, but liter ones are best. They are pre-washed and steam sterilized. If it is not at hand, the amount of ingredients can be divided into 2 parts or more.
All vegetables are washed, peeled and cut into approximately equal slices, onions - in half rings, and carrots can be grated. Then they are mixed and transferred to a bowl or pan of aluminum so that the salad does not burn during cooking. Salt, sugar and butter are added there, brought to a boil and simmer for about 15 minutes, after which they are closed in prepared jars. In winter, they get it and enjoy the bright tasty gift of the distant summer.
Eggplant Salad
By changing several ingredients in the previous recipe, you can get a completely new dish. For 3 kg of tomatoes, 2 kg of onions, carrots, eggplant and bell pepper are taken. A lot of oil will be needed - 2 glasses, and sugar - a glass. Salt is added to taste, also a little vinegar (about 100 ml) will not hurt.
Vegetables, as in the previous version, are washed, cut, and carrots are rubbed. After mixing all the components, the salad is boiled for about 50 minutes (eggplant is cooked for a rather long time), and then laid out in jars, sterilizing them for another 10 minutes. The closed salad can be stored for several years, but it will end much earlier.
