Cottage cheese is a very useful and satisfying sour-milk product. In the cuisines of different nations of the world there are pies, pancakes, dumplings and other culinary delights with the use of cottage cheese in one form or another. A curd filling is used in many dishes. We will try and cook some of them. But first, some simple recipes for the filling itself.
With sour cream and raisins
You need to take: cottage cheese - 250 grams, a couple of large spoons of sour cream, a good handful of raisins, half a lemon, three large spoons of sugar.
Rub the cottage cheese in the dishes with a fork. Add sour cream, mix thoroughly. Pour raisins with boiling water and set aside for half an hour. Grate the lemon finely finely with zest. To lemon - sugar. All mix well. Raisins are drained and dried. Add dried raisins and lemon and sugar to the cottage cheese with sour cream. Mix well again. Sweet and sour air curd filling is ready!
With banana
You need to take: cottage cheese - 250 grams, three large spoons of sugar, a couple of large spoons of sour cream, two bananas.
In a blender (if not, manually) mix sugar, sour cream and cottage cheese. Peel the bananas, cut and add to the total mass. Mix until smooth. The result was a banana curd filling. A recipe good for pancakes, for example.
Drunk cherry
We will need: cottage cheese - 250 grams, three large tablespoons of sugar, a glass of frozen pitted cherries, two small tablespoons of good cognac, several cloves of cloves (dry seasoning).
Beat cottage cheese with sugar in a blender until smooth. Pour the frozen cherry with boiling water and bring to a boil. Add sugar and cognac. In the resulting syrup, cook the cherry for several minutes. We take out the pieces of cherry and add to the cottage cheese. Mix thoroughly. Syrup, by the way, can also be used to water pancakes.
With poppy seeds
Ingredients: half a kilogram of “bazaar” cottage cheese, a glass of sugar, three large spoons of poppy seeds.
Pour poppy with boiling water and set aside for swelling. Then we strain and grind in a coffee grinder or in a meat grinder. Mix the poppy with sugar and cottage cheese, which must first be rubbed through a sieve. We mix everything. Poppy curd filling is ready!
Chocolate
Ingredients: a bar of chocolate (100 grams), a couple of spoons of sour cream, cottage cheese - 300 grams, cinnamon - to taste.
Finely grate a bar of chocolate. Knead sour cream with cottage cheese. Gradually add the grated chocolate. At the end - a whisper of cinnamon ground. Thoroughly mix until smooth.
Cheese
We need: dry cottage cheese - 300 grams, 100 grams of cream cheese without vegetable additives, one egg yolk, 50 grams of butter (or a spoonful of melted).
We wipe the cottage cheese through a sieve. Grate the cheese finely and finely. Mix all the ingredients until smooth (with a mixer, blender or manually). You can add salt on the tip of the knife, as this curd filling belongs to the category of unsweetened.
With herbs and garlic
We need: 300 grams of cottage cheese, a couple of cloves of garlic, a bunch of fresh dill, a large spoon of sour cream, salt and pepper.
Finely chopped fresh dill. We press the garlic in a special machine. Mix sour cream with cottage cheese, garlic and dill until smooth. This recipe can be used to make homemade khachapuri or bender.
With pickles
Ingredients: 300 grams of cottage cheese, one sweet bell pepper, three medium-sized pickled cucumbers, ground pepper, salt, greens.
Beat cottage cheese in a blender or mixer. Cucumbers cut into small cubes. Finely chop the greens. Squeeze the garlic. Mix everything thoroughly, preserving the structure of cucumbers and greens (do not beat). Season with pepper and salt.
With strawberry
Ingredients: a glass of fresh strawberries (or three large spoons of strawberry jam - according to season) or the same amount of frozen berries, 250 grams of cottage cheese, a large spoon of condensed milk, a couple of spoons of sugar.
All products are mixed until smooth. Such a curd filling is well suited for cooking all kinds of pancakes. You can cook with it and delicious dumplings.
Beat cottage cheese in a mixer, cut paprika and cucumbers into small cubes, finely chop parsley and a clove of garlic. Mix everything thoroughly, season with salt and ground pepper.
With red caviar
We need: a jar of red caviar, 300 grams of low-fat cottage cheese, a large spoonful of butter, herbs, grated nutmeg (on the tip of a knife), salt.
Finely chop fresh dill. Mix all the ingredients carefully so as not to crush the eggs. We start the pancakes with the resulting mixture.
Some tips
- To make the cottage cheese tender, you must first grind it in a bowl with a fork. It’s easier if there is a blender: then the dairy product will become airy.
- Raisins or other dried fruits used in recipes should be poured with boiling water and allowed to infuse and swell.
- Candied fruit, used as an additive to cottage cheese, also needs to be lightly steamed and then grated finely.
- Curd dough with curd filling can be cooked in the oven as a casserole.
- Ready-made pancakes with curd filling can be stored frozen in the refrigerator. Before serving, heat in the microwave or lightly fry in butter in a skillet.
Cottage Cheese Pie
It can be done very quickly using pre-prepared curd filling. Moreover, any of the above options! Depending on this, the cake will turn out either sweet or salty - to your taste.
So, we take puff pastry (you can buy it at any supermarket), defrost it. Roll out the dough in a baking dish (two sheets). Rub the baking sheet or the tin, sprinkle with flour lightly. The first sheet of dough has gone! On top of it lay out the previously prepared filling (see recipes above). Cover with another sheet of dough. Adjust the edges (you can make a "pigtail"). We pierce the top sheet in several places to remove air. We coat the top sheet with a beaten egg to form a golden crust. We put in the oven 180 degrees. Bake until cooked (check with a match). We got a quick pie with curd filling. Just a jumble!
Pancake with curd filling
First, prepare pancakes in a pan according to the traditional recipe (at least twenty medium-sized pancakes). Cool them a little. Next, using pre-prepared mixes, make a pancake pie with curd filling. On the round plate (slightly larger than the pancake), put the first one. We coat it with the filling. Cover with the following pancake. Again, smear with a thin layer. Cover again. We send the entire structure to cool in the refrigerator. It turns out a kind of layer cake, very tasty!
