It is suitable for sharp varieties. Peel and chop 1 kg of onion. Add to it 1 bay leaf, salt and pepper to taste, 100 grams of any vinegar and 3 tbsp. tablespoons of any vegetable oil. Pour onion with hot water so that it is completely covered with it. Next, put the pan with onions on fire and heat to 75-80 degrees, then quickly cool. You can store such onions with vinegar for up to 6 days in the refrigerator.

Since there is no bitterness in such varieties, it is enough to peel, chop, add salt and vinegar to taste and leave in a cool place for several hours.

So, we need 1 kg of onions and beets. Peel and cut vegetables. Pour onion over boiling water and put in a bowl. Shift it evenly in layers with beets. For marinade, mix water and wine vinegar in a 1: 1 ratio, add salt and pepper to taste. Pour the marinade over the dishes with vegetables and leave to marinate for 24 hours.
