The “bird's milk” cake was named in order to surprise the sweet tooth with a completely new, mysterious, delicacy.

For the first time, visitors to the Prague restaurant managed to try the Bird's Milk cake, the recipe for which was invented by the legendary famous confectioner Vladimir Mikhailovich Guralnik. He also embodied his plan in reality. This delicacy gained the greatest popularity in 60-80 years. centuries have passed. Cake was baked mainly in Leningrad and Moscow, but it is interesting that it was not confectionery factories that engaged in its production, but ordinary dining rooms and some other small food establishments. That is why "Bird's milk" sold out in a matter of hours. Typically, the cake was small, and all because it was not stored for long - about a day. But this did not upset either the confectioners themselves or the customers, because the ease of preparation and the incredible taste made the cake truly a folk treat. Moreover, housewives at home began to do it more and more often. Cake “Bird's milk”, the recipe of which was difficult to find in print media, was passed from mouth to mouth, and its composition was constantly changing and being finalized.
Cake "Bird's milk": a recipe for modernity
Today, this delicacy is no less popular. The recipe for "Bird's milk" is not kept secret, on the Internet it is presented in various variations. Therefore, everyone can bake such a cake at home. Only at first glance it may seem that it is difficult to prepare. It will take a little time, but what kind of yummy the whole family can enjoy.
So, for those who want to bake a cake "Bird's milk" a simple recipe:
Ingredients: 14 eggs, 3.5 cups of sugar, 2 cups of flour, 2 cups of milk, 1 bag of gelatin, 350 g butter, 4 tbsp cocoa.
Preparation: First you need to cook a biscuit. A glass of sugar is beaten with 4 eggs, at the very end flour is gradually introduced (about 1 glass). The mass must be thoroughly mixed until a homogeneous consistency. A biscuit in baking dish is baked for about 30 minutes.
To prepare the cream, you need to take the yolks of the remaining eggs (do not throw away the protein) and grind. Then you need to add a glass of milk and 1 tbsp flour. Mix everything well and bring to a boil (in a water bath), while stirring constantly. When the cream has cooled, you need to add butter to it. Then dilute gelatin in warm water, allow to swell and put on fire for heating. After this, you need to beat a glass of sugar and protein, pour gelatin into the mixture, mix well. Lastly, combine the gelatin mixture with cream.
The cooled biscuit must be cut into two halves (most conveniently this can be done with a large knife). Put one part on a plate, thoroughly grease with cream, cover with a second half. Put the cake in a cold place. To make it tastier and more beautiful, the cake can be coated with glaze. It is prepared as follows: 0.5 cups of sugar, 50 g butter, 4 tbsp cocoa and 3 tbsp milk bring to a boil, stirring constantly.
