On the shelves of our stores it is more often found under the name “shrimp”, and in Latin America, New Zealand and Australia it is called congrio fish. Shrimp or congrio - a fish that belongs to the species of conger eel and is a close relative of moray eels. The most valuable commercial species include red, black and golden congrio. This fish is called shrimp because it eats sea mollusks, and also its light, soft pink-gray spotted skin resembles the color of king prawns.
Congrio - the fish is very tasty. Its dense snow-white and very tender meat does not have a specific fishy smell, and its long oblong body, reaching a length of 90 centimeters, is devoid of small, uncomfortable bones in cutting, except for the spine, which is easily released.
Congrio shrimp fish is versatile in cooking. It produces a variety of dishes, tasty and nutritious - from fish soup, which is traditionally prepared in Chile and Argentina, to delicious refined gourmet dishes, where it is baked in combination with vegetables, white wine and grapes.
Fish soup
The cleaned and well-washed carcass of the fish is cut into portioned pieces and fried, having previously lightly rolled in flour. Chopped garlic (about four medium slices) is fried in butter in a thick-bottomed pan. Bay leaf, peas of pepper, a small spoon of hot pepper and one spoon of red are added to taste. The mixture is quickly mixed so as not to burn, spread pieces of fish, let it soak in the smell of garlic and pepper and dilute it with hot fish stock, which is pre-cooked from the fins, tail and head. After a few minutes, put the hard-boiled eggs and already cooked potatoes into the stew. They let it boil for several minutes over low heat so that the tastes and smells are mixed, and the fish is completely cooked, and removed from the heat.
Other way fish soup
There is another way to make a congo con Hispanic Chowder. The fish is washed and cleaned, cut into pieces. From the head, tail and fins cooked broth. In the process of cooking add carrots, onions, grated garlic and spices. Peeled pieces of fish should be marinated in lemon juice mixed with salt and pepper. In a pan with a thick bottom in vegetable or butter, fry the onions, carrots, the last to put slices of tomato without skin. Then put red bell peppers and potatoes. Pour vegetables with fish broth, salt and pepper to taste. After boiling, dry white wine is poured into the broth . After boiling again, put pieces of raw fish and cook over low heat until vegetables and fish are cooked. For exoticism and refinement, five minutes before being ready, peeled shrimps are put in a chowder. Chopped greens and a spoonful of fat cream are added to the dish, poured into plates.
In addition to traditional stew, there are other recipes. Congrio fish, for example, are excellently baked in the oven with vegetables or sour grapes.
Baked fish
Well washed and peeled fish and skin, the fish is cut into portions and marinated in grape vinegar for several minutes. After that, pieces of fish are mixed with salt and pepper and various spices are added to taste. Pieces of fish are spread in the oil form, covered with tomato slices, sprinkled with white sour grapes and put in the oven for twenty to thirty minutes until the fish is ready.
Fried congrio. Shrimp Fish
Pieces of congrio fish are sprayed with lemon juice, mixed with salt, pepper, make a shell of flour or ground nuts and fry. A sauce is prepared separately, for which a glass of medium-fat cream is heated on the stove, and hot soft cheese is placed in hot cream. When the cheese is dissolved, peeled shrimps are put in the sauce and cooked for 5 minutes. The fish is laid out on a plate, topped with sauce, and sprinkled with parsley and dill.
