Cherry jam has a delicate aroma, dark red color and a sweet and sour taste. Many still remember this dessert from their childhood. If the parents had a house in the village, then, of course, at the sight of a cherry jam, joyful moments immediately float when this delicacy appeared on the table next to the ruddy pancakes. Alas, what is sold in modern grocery stores does not resemble tasty jam from childhood. And not everyone has the opportunity to plant their garden. Well, there is a solution. Cherries are available on the market. It remains to weld them correctly. Cherry jam for the winter is prepared very simply. This recipe is affordable even for young housewives.
What do you need?
First you need to prepare all the necessary components. To cook jam from cherries, you need:
- Ripe fresh cherries - five kilograms.
- Water is one liter.
- Citric acid - four grams.
- Sugar - three kilograms.
How to choose the right cherry
To make the cherry jam tasty, you need to choose the right berries. They should be not only juicy, but also fleshy. However, when choosing cherries, you should beware of shriveled, damaged, too soft and overripe berries. Of course, similar products can be prepared. However, the shelf life of the finished jam is significantly reduced.
Unformatted fruits should be removed during their processing. Of course, what you can eat should be left. And what is no longer suitable for food should immediately be thrown away.
Berry preparation
In fact, the jam preparation process is very simple and takes a little time. But preparation requires patience. The main thing is to follow the sequence. Berries purchased on the market must be washed. This must be done carefully to wash away the accumulated dirt from their surface. Of course, if the berries are from your garden, then this stage can be skipped.
Washed cherries should be placed in a colander and let the remaining water drain. Now begins a long and painstaking work. In order for cherry jam to be very tasty and tender, it is necessary to remove seeds from the fruits. It is for this reason that you need to choose only ripe and fleshy fruits. Bones from such berries are removed very quickly and simply, there is practically no pulp left on them.
Prepared fruits should be chopped. This is best done with a blender. If there is no such tool in the kitchen, then you can use a conventional meat grinder.
Cherry jam: recipe
From the berries should be mashed. It is necessary to add sugar to this mass, as well as pour water. The container with the future jam should be placed on medium heat. The mass in the pan must be brought to a boil. After this, jam should be mixed regularly. Otherwise, the treat starts to burn. Do not be afraid that the jam will dry out. Water and, of course, juice will simply not allow this. Cook such a treat should be from 2 to 3 hours. It all depends on the width of the bottom of the tank.
A couple of minutes before complete readiness, add citric acid to the composition and mix everything thoroughly. When the shovel of wood begins to leave a mark on the surface of the mass, you need to increase the heat and boil the jam for another three minutes. After that, you can turn off the gas. Cherry jam is almost ready. After cooking, it should cool slightly.
How to store
Ready jam should be stored exclusively in a glass, preferably sterilized container. You can leave a few jars for eating goodies in the near future. You can not roll them up. It is enough to close with tight nylon covers. The rest is better to roll jam from cherries. So it will be better stored and will not be covered with mold after some time. For this, any metal covers are suitable.
